New England Supper Loaf A meatless main dish that', hearty and appetising

Vi cup dried bean** 3 cup* water IVi teaspoon* celt Vl cup finely cut onion

2 tablespoon* meat drippings 1 well-beaten egg Vs cup Pet Milk 1 cup day-old bread crumbs few grains pepper

Soak beans in water 6 hours, c overnight. Then add 3 A teaspoor. salt. Cover and boil slowly 2 hours, or until tender. Add a little water toward end of cooking period if necessary. Drain beans and mash thoroughly. Turn on oven; set at moderately slow (350° F.). Grease loaf pan about 7 t 3 i 3 in. deep, or baking dish holding about 3 cups. Cook onion slowly in meat drippings 3 min. Add to mashed beans with beaten egg, milk, bread crumbs, remaining 3 A teaspoon salt and the pepper. Mix thoroughly. Put in prepared pan. Bake on center shelf of oven 43 min., or until firm. Serves 4. ★Navy, lima, kidney or pintu beans or black-eyed peas can be used. Soybeans can also be used if water for soaking is increased to 4 cups, and cooking time increased to 2Vs hours, or until soybeans are tender.
