Don’t hesitate to use the utility beef now on the market. It can be mighty savory and tender if cooked this way. Browning the meat to a rich, dark color in pure vegetable Shortening gives fine flavor to the meat and gravy. And long, gentle cooking in moist heat is a must to soften the tough tissue of the meat. Remember, utility beef is POINT-FREE—just as nutritious as the choice prime cuts, if properly cooked. Braised Beef with Vegetables

4 tablespoons flour 2 teaspoons salt % teaspoon pepper ’4 teaspoon celery salt 154 pounds utility round steak (about 154 inches thick)

3 green peppers, sliced Mix flour and seasonings and pound into steak with mallet or edge of plate. Heat Spry in skillet and sear steak until well browned on both cides. Put steak in casserole and cover with onions. Add water to skillet to make thin gravy. Pour gravy into casserole with meat. Add additional water to almost cover meat. Cover and cook in moderate oven (.".50° F.) 2-2% hours, or until tender. Add vegetables to casserole. inkle with salt, cover, and cook 20 minutes; uncover and cook until jetables are tender (about 30 minutes). Serves 6.
