It is operated in a coroperative fashion —Speedway business men, the town officials, the school, the Speedway churches, all local clubs and civic groups, in fact the entire town of Speedway contributes to this community enterprise. Everyone concerned with the management of the paper lives in Speedway and is interested primarily in the best interest of Speedway. Marshmallow Lemon Layer Cake % cap Spry . 1 cup sugar •J 4 teaspoon salt 2 eggs, unbeaten 1 teaspoon lemon 2)4 teaspoons baking juice powder 14 teaspoon lemon 2 cups sifted floor rind % cup milk Blend Spry, salt, lemon juice and rind. Add sugar gradually and cream well. Add eggs, singly, beating 'well after each addition. Sift baking powder with flour 8 times. Add flour to creamed mixture, alternately with milk, mixing, after each addition until smooth.

Peanut * Scotch Pie 214 cups milk 1 cup brown sugar, firmly packed 2 tablespoons cornstarch 3 tablespoons flour % teaspoon salt 2 egg yolks, slightly beaten 4 tablespoons peanut butter 1 baked Spry Pie Shell 2 egg whites 4 tablespoons sugar Scald milk in top of double boiler. Combine sugar, cornstarch, flour and salt, and mix thoroughly. Add to scalded milk and cook until thick and smooth, then cook 15 minutes longer, stirring constantly. Stir a small amount of mixture into egg yolks, return to double boiler, and cook a few minutes longer. Remove from heat. Add peanut butter and blend. Cool. Pour filling into baked pie shell Beat egg whites until stiff. Add sugar gradually, beating constantly. Pile lightly on filling. Bake in slow oven (325° F.) 25 to 30 minutes, or until firm and delicately browned.
