Spring has officially arrived in Speedway. How do we know???? Well, sir one day this week while we were meandering around Main Street snooping into everybody’s business, what should be hear but the num of a race car over at the race track. Yep, the first race car was taking its trial spin on the old -oval. Now if this isn’t a harbinger of spring, we’ll eat our faded fedora.
Maybe we’re part fire horse, but everytime the fire whistle blows we drop whatever we’re' doing and run to the fire. Now perhaps a lot of you folks didn’t know it, but going to a fire in Speedway is not just a satisfaction of curiosity. In this town the presence of friends and neighbors at a fire is often of great assistance. We had a small grass fire last week down on the George--town road and this reporter noticed that not many people turned out. Now, you new people in Speedway might as well get onto the hang of things by learning to go to all the fires if and when they happen. When the Prest-O-Idte whistle blows four short blasts, grab your hat and run. ■■ s> We just want to stop here and now to pay our tribute to Mr. Northcott and his fine school band. Yessir, we’d say that North? .cott has done a fine job and he and the band are to be congratulated. Speaking of school activities reminds us that tonight’s the night for the senior play. Now we don’t know whether you can get tickets or not because at the last report they were selling like “ye old hot cakes” but from all reports, we’d suggest that you try to get tickets for if you miss this play, you’re really going to miss something. - After seven years on Main Street Dot has sold her restaurant. Dot’s Coffee Shop, as her eatin’ place was called, has been a familiar landmark on the “Main Drag” of this town and now it’s to go under the rather splendiferous title “Hollywood Case.” Well, we’ll all miss you Dot. Guess that’s about all for this week. Our mind is about as dull as the old time barber’s razor. SEE YOU NEXT WEEK. “KTEVER wait longer than half an 1 V hour for any dinner guest," says one prominent social authority. But, oh, what havoc can be wrought on a perfect meal in even that short time! The vegetables cool and wilt; the meat dries out; and as for the disposition of the hostess —suffice to say it wilts too. And finally, when the tardy guest does arrive, the hostess must absent herself to reheat and refurbish the food before she can serve. If you’re a very smart hostess, you will frankly admit that somebody’s bound to be late and plan a dinner that can take waiting blithely in its stride. Particularly then, are you fortunate if you have in your kitchen one of the special warming ovens that are a part of some of the modern electric ranges. You see, these new warming I ovens have a serving drawer arI rangement that holds twin casse- ; roles of food, keeping it hot enough for serving with no fear of burning. When ready to serve, moreover, the hot main dish and vegetable (as shown in the photograph) can be taken right from this electrically heated wanning compartment to the dinner or buffet table. scalloped vegetable cutter. To complete the menu, serve a tossed green salad, crusty buns, hot potato sticks, and cream puffs filled with ice cream. Ham 'N Oyster Casserole (Serves 8) 4 tablespoons fat 4 tablespoons flour 2 cups milk IY4 cups American cheese (grated) 2 tablespoons pimiento (chopped) ~ % teaspoon dry mustard 2 teaspoons Worcestershire sauce % teaspoon salt 14 teaspoon pepper 3 cups ham (cubed) % Pint oysters (drained) (cut in half) 1 cup soft buttered crumbs Melt fat in saucepan on surface of electric range over medium heat. Add flour and stir to make a smooth ’ paste. Add milk, and cook over medium heat until sauce is smooth and thick, about 10 minutes. Turn switch to low heat, and add grated cheese, pimiento, mustard, Worcestershire sauce, salt, and pepper. Heat, stirring occasionally, until sauce is smooth and well-blended. Add cubed ham and oysters, mix lightly and pour into a wellgreased heat resistant casserole. Top with buttered crumbs. Bake in hot oven with electric temperature control set at 400’ F. for about 20 minutes.
