To The King's Taste
PUT a menu card In front of a man at a restaurant, and if his eye lights on the words “Old-Fash-ioned Strawberry Shortcake,” his choice of dessert is automatic. What a taste-tantalising picture Just the mention of strawberry shorttake creates! Tradition says that this dessert mußt be made with a rich biscuit dough not cake —for the foundation, and that it should not be baked until the meal has begun, so that it can be served just as it comes from the oven. Shortcake, as the name implies, should be rich with butter or other shortening. It may be baked in one large cake, or in individual servings, if desired, but the starting point is nothing more than a rich, sweetened biscuit dough. Old-Fashioned Btrawberry Shortcake (Serves 6) 2 cups flour 2 teaspoons baking powder % teaspoon salt % cup sugar % cup shortening % cup milk (approximately) I*6-2 quarts strawberries
Sift dry ingredients together. Cut in the shortening, using a pastry blender or a fork, until the mixture resembles coarse meal. Add the liquid gradually, mixing lightly. Pat into a greased 8-inch cake pan, and brush with melted butter. Preheat the oven of your modern electric range, with the thermostat set at 400°. Then, just before you sit ■down to dinner, pop the shortcake into the oven to bake for about 25 minutes, while you enjoy the balance of your meal. shortcake you’ll have! When done, remove shortcake- to. a. wire rack aid with a fork separate into two layers. Spread with butter while the shortcake is still hot, and fill with crushed, sweetened strawberries. Be generous with the butter and open-handed with the berries! Put the two layers together, and top with additional berries —ther serve with thick rream or sweetened whipped cream. There are two schools of thought about the cream but they both seem to agree that you’ll have to go a long way to equal the lusciousness of that particular combination hot, brown-crusted shortcake oozing butter, and the rich flavor of chilled, sweetened berries, topped off with cream. The strawberry season Is all too brief, so make the most of it while you can. You might, for convenience and speed, keep a bowl of your own shortcake mix on hand in your electric refrigerator. Just double or triple the recipe, mixing dry ingredients and shortening, and store in a covered container until you are ready to use it. Then when you want shortcake in a hurry, turn the thermostat of your electrie range to 400°, and preheat the oven while you combine short-cake-mix with milk, and pat the dough into the pan. Fast-heating ovens of the modern electric ranges require only a few minutes time for preheating, and sensitive thermostats control the heat at exactly the temperature yeu desire. Other berries and fruits make temptingly delicious shortcakes, too —sweetened raspberries or blackberries, sliced sweetened peaches and well-sweetened rhubarb or cranberry sauce, make desserts that are second only to the best .of them Strawberry 9u»rtcake!

Mortar aerial shells of dazzling color combinations and brilliant hues explode at frequent intervals between the many set pieces depicting George Washington, the Statue of Liberty and other patriotic symbols of American history at the eighth annual Sahara Grotto Fireworks show at Butler Bowl Thursday evening, July 4. “The Battle of the Seas,” an achievement in fireworks construction, shows two dreadnaughts engaged in battle in mid-ocean. A submarine attempts to torpedo the warships. A dive bomber airplane appears in the battle-sky with guns blazing and drops bombs on the ships and submarine which burst into flames, explode and sink, as the plane zooms away through the blackened sky to conquer more helpless objects.
