tific exactness of motion that is curtain to produce a result. Select, therefore, for the purpose of beating cream as light a wire whip as you can get, or even otk of bamboo. Begin beating rather slowly and increase the pace until by rapid beating a fine firm froth is prodxiced.

The pan in which the cream is beaten should rest in a second pan of chopped icc, and the cream should 1 to thoroughly cold before you begin to bent it. Lift the froth carefully oft when it become thick ou tho surfaco of tho cream into an earthen lined colander set in a second pan, so that any superfluous milk mr drain off. Continue to beat till the foam will rise po longer. There will always be a little cream in the bottom of the pan which is not rich enough to beat to a froth. This may be used for coffee or for frozen creams.

It is possible for cream to be so heavy that it will clmrn into butter in a cream churn before it forms a froth. Then need bo no such trouble when it is beaten with a whip. A great many housekeep ers who have become accustomed to a largo cream chum do very satisfactory work with ifc. but it is not oniployed by domestic workers outside tho family kitchen and at best is an awkward contrivance. When the cream is once beaten, it will not return to a liquid state unless it is heated.

A genuino French charlotte russe is not stiffened by gelatin, but is made of whipped cream flavored and sweetened in various ways. The cake which forms tho cover is always spongo cako, and tho most convenient form is that of the sim pie lady fingers that aro to be found in any bakeshop. These dainty little cakes are generally used for a charlotte russe by tho French. To make individual molds, split tho lady fingers and cut them in half. ETavo at hand sis small charlotte rnsso molds. These should be about inches liigh, 2 inches across the bottom and sloping toward the top. Lino tho molds with tho pieces of lady fingers, being careful to keep the outside of the cakes against the mold.

It will take about a pint of cream beaten to a stiff froth to fill these individual charlottes and leave a little to make a dressing around them. If j-ou wish charlotte russe a la vanilla, flavor tho whipped cream with a teaspoonful of vanilla, adding 3 heaping tablespoonfills of powdered sugar for sweetening. If you wish the charlotte russe au cafe, add 2 tablespoon fills of coffee essence with tho samo amount of sugar, or if you wish it flavored with maraschino add a tablespoonfnl of this liquor.

OCT OF THE MOLD.

A delicious apricot charlotte may be made of a pint bf preserved apricots strained through a sieve to form a puree, to whieh an ounce of dissolved gelatin is added. Chill the puree and stir it till the mixture begins to thicken. Then add a quart of well whipped cream sweetened with a scant half cup of pow dered sugar. The amount of sugar needed will depend largely upon the amount in the preserved apricots.

Baited Omelet X* Nice.

Allow less than two eggs apiece, or fox four people six eggs. Beat all the whites and yellows together save one white, which beat separately. Add a dash of salt, one of pepper and a dessertspoonful of flour mixed to a thin paste in milk then add aA additional tablespoonfnl of milk. Beat in the whipped white, mix well, poor into a hot, well buttered pudding dish and bake. When it sets, it is done. Send hot to the table, for it soon Calls. This is as good as omelet souffle, but should baked in a deep dish and of coarse aerri— in the saxtMk.

Chilblains In Ui« Hand*.

Take a pi-"^ of alum about the size of a nut and Lidt in enough hot water to com* the bands. When tbo alutu has quite dissolved, soak your hands in tbe liquid for a quarter of an hoar. Wipe tbe bands dry, pat on loose gloves at onc« mid wear them all night and as long as you can during tbo day.

The most useful and sensible style of shopping bag, because tho handiest and most commodious, is the kind which is made pf the ordinary bag shape and li"^ over the arm by means of ribbon strings, which are let in some two or three indies

The design here given in simple in character, but most effective, while very refined in style, if carried out in suitable coloring. It looks particularly well when intended to be used with a black costume to execute tho design in two shades of dull red embroidery silk of the eolor which was known at the time of the Paris exposition under the title ©f eiffel red. Work the flowers solidly in the lighter shade and outline both center and petals with tho darker tone, which is also used for the curved and radiatinj lines which are rendered in brier stitch Tho lining of tho bag, which shows when it is closed by being drawn together at the mouth, may be of the deeper red Double strings should be inserted, allow ing sufficient size for the bag to hang at a convenient length from tho arm, and if desired a good sized bow with ends may be sown in the centcr of ti,o band of ribbon which lies uppermost on the wrist when tho bag is carried.

A Splendid Deodorizer.

One of tho simplest disinfectants of the sickroom is ground coffee burned on a shovel,'so as to fill the atmosphere of tho room with its pungent aromatic odor. If two redhot coals are placed on ttffiro shovel, and ateaspoonful of ground coffee is sprinkled over them at a time, using three teaspoonfuls in all, it will fill the room with its aroma and is said to have tho hygienic effect of preventing the spread of various epidemic diseases. Tho odor is very agreeable and soothing to a sick person, where other disinfectants prove disagreeable. Physicians who doubt tho power of coffee as a disinfectant frequently recommend it as a de odorizer, and it is certainly one of the very best and most agreeable.

Directions For Improving tho Complexion.

If j*ou want to improve a bad complexion, let your face alone, keep out of the drug store and don't doctor. Drink a glass of hot water an hour before dinner. If you are not hungry, work up an appetite. By work is meant work, not make believe. Drink wine if yOu can afford it. One glassful at dinner with twice as much water is medicine of the best kind. Sweet milk is excellent. Limewater may be added to make it more digestible, Sour milk is good. Everybody can drink lemonade. When tart.it is prime. Eat fruit after every meal. Bananas are poison in this section of the globe.

StrawTjerries are excellent for the complexion. Eat them by the quart, with or without sugar. Put cream on them or cake over them and you tuin everything. Ripe peaches, grapes and oranges are worth their weight in gold. Juicy apples aro cheap at any price. About once a week—the day that your complexion shows bilious brown and yellow fever tints—take an early lunch or a. late breakfast of 10 courses, consisting of eight sweet oranges and two slices of toast. Water at meals is very, very bad. In Paris, the cradle of good living, water is never sent to table excepting in finger bowls. Cold water chills the stomach. Digestion requires heat. If it is necessary to drink at meal times, and the best authority questions it, have mercy on the inner woman and use warm liquids—weak, red wine, tea, coffee, etc.

Good sonpis one of the best complexion foods, but a soup with noodles, dumplings and similar pasty things is not good. Oyster soup is good provided the oysters we saved for the ash cart. Candy is a hard thing to resist, bui iUke spices, sauces and ices it is a foe to beauty. A succulent diet will care pimples and eruptions. On the list are salad greens, beets, sprouts, tomatoes, onions, asparagus, and as the rhyming doctors sang of old:

Put, for 12 persons, a half pound of grated cheese into & saucepan: add a teaspoonful of batter and a tablespoonfnl of tomato catsup stir over tbe fire until melted. FINE GLASS.

Care of Ttottles, and An Old Remedy Exploded.

We sometimes read very curious directions for doing very simple things It is among the oldest of notions that birdshot is useful for cleaning bottles, decanters, etc., and it' may be in some cases, but one must not use it for fine glass or that which is in any way delicate.

Many a valuable bottle and decanter have been broken by the use of shot. It does very well for coarse, common, heavy glass, and one might naturally suppose that this was the sort that must have been used by women who recommended it.

The ideal material for doing this sort of work is coarse sand. Gather a panful of ordinary sand from any washout on the roadway. Pass it through a common sieve and put it away for this purpose. Half a cupful thrown into a bottie and shaken about will scour the inj?*side as clean as can be. It must be used

This cannot possibly scratch, and although it takes more time to achievo the desired result, it is done with no risk to the finish of the article. Good, clean, sifted sand has many uses. If one cannot obtain that which is perfectly clean, ordinary sand that has been washed down by the roadside may be used. Throw a panful of this into a tub and pour in water, stirring the sand vigorously until all of tho muddy l&ok is washed out. When the water shows perfectly clear after bain? stirred up, the sand is- clean. It may then be dried and put away in a bag or box for future use. -A Famous Medicine.
