Broil steak without salting. Salt draws the juices in cooking it is desirable to keep these in, if possible. Cook over a hot Are, turn frequently, searing on both sides. Place on a platter, salt and pepper to taste.

Beef that has a tendency to be tough can be made very palatable by stewing gently for two hours with pepper ana salt, taking out about a pint of the liquor when half done, and letting the rest boil into the meat. Brown the meat in the pot. After taking up, make a gravy of the pint of liquor saved.

It is not generally known that for scouring knives, forks, spoons and tin ware, the common water lime such as is used in plastering cisterns, cellars, etc., is one of the very best materials. It does not scratoh and will net injure your best silver. Apply with a damp cloth. The more often such things are cleansed the more easily they are cleaned.

The Herald of Health says that sleep, inst after dinner is a bad practice, and that ten minutes before dinner is worth more than an hoar after. It rests and prepares the system fbr vigorous digestion. If sleep be taken after dinner it should be in the sitting posture, of the horizontal position is unfavorable to healthful digestion. Temjwrary felief from a painful sore oorn uiav readily be obtained by applyling strong carbolic acid. Take tbe cork out of a small bottle of carbolic and apply it (tbe cork) to the corn. Relief will «ome at once, and you will be enabled \o walk with comparative comfort till -ou can find time to remove the corn

With the knife. Hard corns may te treated as follows: 'Take a thick piece of soft leather or felt, •jut a hole in the center. Upon going to sed at night fill the bole in the center of he leather with a paste made of soda laid soap wash it off in the morning, and repeat the same process fbr several nights and the oorn will be removed. Or in this way: Take a lemon and roll till soft cut a thin slice and bind it on ne coru at night. In the morning, it vhite and disintegrated, pull it with -our linger nails. Sometimes several tpplications will be neccessary.

HOW TO SERVE THEM.

Tim* was when this famous shellfish waa a luxury In onr Western country and savored so strongly of the silver hook that many denied themselves from cholee, and many more from neeeaslty Competition, oheap labor, and increased facilities fbr transportation have ohanged all this, and oysters, always a healthy and nutritious artiole of food, are oheap as well almost everybody—exoept the oyster dealer—rejoices in the change, for the world In general is trying to solve the problem ofcheap living, and almost everybody Ukea oysters if one oan have what one likes and still be eoonomical so much the better. To be sure these poorer grade* would scarcely suit the taste of an epicure, since cheap oysters are apt to be thin, watery and devoid of flavor but then everybody is hot an ioure, and the majority of people con&i er the inferior oyster quite good enough for stewing. It is unfortunate that so many com: them into litileisoparate lumps of indigestibllity before they are considered fit to eat. In themselves, oysters are not promoters of dyspepsia, but after being subjected to tortures in the way of frying pan and kettle, are more than likely to beoome so. The simplest way of oooklng them is the best and, however tbey are prepared, oysters should never be cooked long enough to shrink them* At the drat application of heat they will grow plump, then the edges will ruffle, and any further oooklng shrinks and toughens them into tastefulness.

death often come to children through the inattention or carelessness of parents. A child should never be allowed to go to sleep with cold feet the thing to be last attended to is to see that the feet are dry and warm. Neglect of this has often resulted in dangerous attacks of croup, diptheria, or a fatal sore throat. Always on coming from school, on entering tfie hause from a visit or errand in rainy, muddy or thawy weather, the obi id should remove its shoes, and the mother should herself ascertain whether the stockings are the least damp. If tbey are, they should be off, the feet held before the fire, and rubbed with t'ie hands until perfectly dry, and another pair of stockings and another pair ol shoes put on. The reserve shoes and stockings should be kept where they ar« dry, so as to be ready for use on a minute's notice.

OYSTER SOUP.

Put three teacupfuls of rich milk in a saucepan to heat drain the juice from a quart of oysters and add to it put in one teaspoenful of salt, one of white pepper, and a tablespeonful of butter. Roll four medium sized crackers as fine as flour, and when tbe milk is just ready to boil, sift these in slowly and stir until it boils up once, then add tbe oysters, and as soon as the edges curl serve immediately, accompanied by oyster crackers and pickles.

FRICASSEED OYSTERS.

Put a quart of oysters to heat in their own liquor tbe moment it begins to simmer turn them into a colander, and save the.liquor in a dish. Put a tablespoonful of butter into a saucepan, and when it melts put in two teaspconfuls of flour. Stir and oook for a minute or two and then ndd the oyster liquor by degrees. When well mixed and almost boiling, take off the saueepan while you stir in the yolks of two eggs beaten with half a cupful of cream or rich milk. Season to taste with pepper and salt, and put in the oysters. Return to tho fire for a minute but do not let it boll, then turn over slices of buttered toast and serve immediately.

SCALLOPED OYSTERS.,

These may be cooked in their own, or in clam shells, which are moreN roomy, or in silver scallop shells which look better, or altogether in one dish, when they will taste quite as well ammuy way. alt&ough they may not present so good an appearance. If cooked In shells1, two or three oysters are arranged in each one, with a layer of cracker crumbs on the top and bottom, and a few drops of the oyster juice added, with penper, salt and some bits of butter. Tbeyronst be put on the upper grate of a very hot oven until plump and hot, and served as soon as done. If cooked in a pudding dish, butter it and sprinkle the bottom with cracker crumbs. Warm the oysters very slightly in their own liquor, then arrange a single layer of them over the crumbs, placing them close together. Take them up with a tablespoon, and the juice which clings to each oyster will oe sufficient to moisten the cracker season with penper and salt and stick bits of butter closely over tbe surface. Put on another layer of tcrackers, then more oysters, and seasoning with plenty of butter. Make the top layer crackers, and aronnd the edge of the dish plaoe a row of whole oyster crackers. Bake in a quick oven lor fifteen or twenty minutes, when the top should be nicely browned. A large dish will require a little longer, but a alow oven and too long oooking will completely ruin them.

FRISn OYSTERS.

Drain tbe jaioe from tbe oysters, and season them well with pepper and salt. Let them stand for an hour, thai dip each one separately into rolled cracker crumbs, afterwards into an egir beaten with two tablespoonfols of milk, then in cracker crumbs again. Tbe latter must be seasoned with pepper and salt. When all are ready set them to one side, to be cooked just when wanted, as they should be eaten as soon as done. To oook them, have a kettle of boiling hot lard, into which plunge a frying basket with a few oysters in it when oooked to alight brown color, lay them on a piece of whitish brown paper and set them in the open oven, to drain, for two or three minutes, then serve en a hot platter accompanied by cold slaw or celery salad.

American oysters are without doubt the best to be found. They vary In flavor according to the locality from whioh tbey are taken, and the treatment they reoeive before and after being dredged. Medium sized, plump oysters are usually better and finer flavored than very large ones. Shell oysters have the true salt water smell and taste and the ad van tage of being surrounded with their own liquor, instead of being dumped Into cold water like their pfeblan bretheren of the keg. Are very strengthening, and will often be relished by an invalid when nothing else can be found to tempt him. They are also an excellent appetizer for the well, and make a capital first course for .dinner. when tbey should precede the soup. If shell oysters are used, remove the upper half, leaving the oyster on the lower portion, but detached from it. Sprinkle with salt and pepper, and set in a cold

ace for a short time before serving, with curled parsley and quarters of lemon. If preferred, arrange the oysters on small plates—after peppering and salting, garnish each one and plaoe on the table before the guests are seated.

A novel and effective arrangement for a dinner party, is a vine wreathed block of ice, in the top of which asymmetrical hollow has been melted with' a hot iron. The ice is laid in a platter wfth a folded napkin tinder it the oysters, salted and peppered, are placed in the cavity, and the lemon around the edges of the platter. The glittering ice and green leaves form a beautiful contrast, and the oysters are sure to be nice and cold.

STEWED OYSTRRS.

Heat a quart of oysters in their own liquor tbe moment the edges begin to ruffle, skim them into a hot dish, and add to them a tablespoonful of butter, cut into small pieces. To the liquor add about a teacupful of hot cream or rich milk, and season to taste with salt, and white or cayenne pepper. Skim well turn it over tbe oysters and serve immediately.
