HOW TO COOK POTATOES.

jt Pleasing Variety of Dishes to be Made JFYom Them.

On no subject is there Is a wider diversity of opinion, tmong oooks, than the treatment of potatoes. One reliable authority says to lay them for an hour in cold water before oooking. Another says they suffer even in the washing process, let alone soaking them in water, and that tbey should not be washed until just before oooking. Number one "nays plunge them in boiling water, well salted cookasteadlly until done drain off every drop of water, sprinkle them with salt, and dry out all remaining molstqre. Number two afirms as stoutly that there is no method to be compared to that pursued in Ireland, which is to wash the potatoes as thoroughly and as quickly as possible put them in an iron pot of cold water with a little salt place on the fire, and, when the water boils, a little cold water Is dashed in. This process is repeated, and when the potatoes are nearly done, all but a few spoonfuls oi water is poured off, the kettle is tightiv covered until the potates are nearly done, when the cover is removed ana the water evaporated. Tbey are then served, a few at a time, In Vi uncovered disb, and with their jackets on but bursting from them in a glorious state of mealiness and whitenes*. By no means should they be peeled, or tbe dish covered, as to be enjoyed in perfection, tbey should be piping hot, and covering tbe dish to keep them so would render them watery, Heaps of potato skins are not

It is generally conceded that tbe cook who can Always boil potatoes just right is a genius, and well sbe may be, for it remembered tbat there are potatoes and potatoes, and uo cock, be sbe ever so skillful, can dress a bad one into a good one. In our own experiments we have fyund the method puisued in cooking one variety—rendering it perfect would be less successful with auotlier. For all varieties tbe following rules should be observed:

For cooking at one time select those nearly of a size, so that tbey will be done„at the same time. Bui 1 tbem in enough salted water to cover them in a close, oovored kettle, and when done be sure that the water is thoroughly evaporated be lore serving. Very poor potatoes should never be boiled, but stoamed Instead they should be takeu up as soon as done, and the water dried ofl as before directed.

Except for an occasional dish, with their jackets on, and for use in salad, or warming over, wo prefer paring old potato** tmfore cooking thitjf should be done carefully aud tbe eye* thoroughly removed, so that the snowy Whiteness will not be marred by unsightly specks. When done, dry the moisture troiu them, and dish whole, sprinkling lightly with popper, and basting with, a little melted butter, or, put tboiu in a tin pan on the stove, mash them—with the potato beetle, not tbe one that infests the growing vine, but a wooden one—and when tney are very smooth aud free from lumps, add Bome hot cream, or rich milk, in which is melted a generous piece ol butter. jNow, with a fork, beat all together, unQUI you have a snowy puff. .They must be kept hot during this process if not silt enough, add more heap them ou a hot dish and smooth Into mound with a spoon dot the surface wish a few spots of pepper of equal size and uniform distances, or, simply sprinkle the surface lightly with pepper, and press the bowl of the spoon in the center, "Where may be put a" small piece of butter. They should be served as soon as possible, else they will grow heavy.

A NICE IIRKAKKAST DISH

May bo made by placing fried sauces or broiled mutton chops in symmetrical form around abed of mashed potato. It is not only a pretty looking disk, but both meat and potato are improved by the ootnbination.

POTATO SHORt CAK&

Make a crust as for strawberry shortcake. When this is baked, have ready some nicely mashed potatoes, lljilit and creamy, and when the cake hits been carefully split open and buttered on both sides, spread in a half-inch layer of the potato—which must uot by too stiff. Over the potatoes pour a little sausage gravy then replace the top of the cake and set it In the oveu for just live mlnutes. It will be very generally prouounced a pleasing variety in a breakfast bill of tare.

To the above preparation or Inashed potatoes, add ogg* beaten separately. Jdlx all together until very light, keep4ng it on the stove so that the eggs will be lightly cooked. Turn the mixture

Invert it on a platter if put In properly it will »o«ne out tu perfect chape. Brush the sutfAcu wish bente* egg and silt tin* crtu-kor crumbs over it remove all superfluous crumbs, and brown the potato in a quick oven. Serve It on the Maine dish. POTATOK9 SCALLOl'KD WITH COLD MEAT.

Veal or mutton are the Lest for this dish, but tbe remains of any cold rosat meat may be used. Mince the meat— not too tine—and add to it some well thlckeued gravy. water and when it boils allow five minutes for each pound. Pick the fish in (lakes—removing tbe bones and skin— and lay it in the center of the potato. Over it poor a becbetnel sauce made as directea in Tbe Mall of March 23 Brush tbe potato with beaten egg, and sift fine cracker crumbs over all. Brown in a hot oven and send to ta*de garnished with slices of hard boiled eggs. This dish will be found a convenient one for an early breakfast, aa it can be prepared the day before, but the sauce should not be added until it Is to g«f into the oven.

Salt codfish prepared in the same manner is quite as good as fresh fish. Soak the flab for a few boors previous to cooking andjpimmer it very gently until it is tender. Boiling salt"fish ruins it the longer and. harder it is boiled, the tougher and more tasteless It will become.

LYONNAHB POTATOKS.

Put a tablespoonfui of butter into a frying pan, and, when melted, tbrow in two tablespoonfuls of chopped onion. Have ready, sliced, a pint of cold boiled or steamed potatoes. When the onioti is tnrning brown put in the sliced potato, aud a little chopped parsley seatrtn to taste with pepper anil salt and turn the potatoes over with a broad bladed knife until tbey are well heated, aud very slightly oolored, when -taey should be served immediately.

POTATOKS WITH CREAM.

Put an even tablespoonfui of bu ter into a bright pan, ana, when it meit?, addau even tabl«s»poonful of floor mix well, then add ty degrees half a pint of sweet cream, and a tablespoonfui of chopped parsley. Season to taste with salt and white t-epper, and when the mixture boils add a plat of cold sliced potatoes, tbat have been boiled or steamed. Serve as soon as the potato is well boated through. Milk may be used Instead ot cream, in which ea«e more butter and a little more flour may be nsed.

.JSj, HOUSEHOLD RECIPES. Fried Omelet—Three eggs, two gills of milk, two tablespoonfuls of flour, a little salt and pepper. Fry on a hot griddle. 1

Pie Crnst—T«ko a teacupful of good sweet lard, aud one and one half tea spoonful or salt to a quart of flour, with water enough t« make it a stiff doughwork just enough to mix well.

Potato Soup—Take six good sized potatoes, sliced thjn, a quart and a pint of water, a pint of milk, lump of butter the size of an egg, pepper aud salt to suit tbe taste, and crackers if you prefer the in.

Buttermilk Pudding—Two eggs, two oups of sugar, half a sup of butter, one teaspoonful of soda slUsed In two cup« of flour, three cups of buttermilk, and stir tbe flour lightly grease your tin and bake one hour. It can bo turned out

CAUSES OF SUDDEN DEA TH. Very few of the sudden deaths which are said to arise from diseases of the heart do really arise from that, cau^e. To ascertain the real origin of sudden deaths, experiments have been t.ri in Europe and reported to a scientific congress held at Strasbourg. Sixty-six cases of sudden death were made the subj«ct of a thorough post mortem examination. Iu these only two were found to have died from disease ot the heart. Nine out of sixty-six had died of apoplexy, while there were /orty-six cases of congestion of the lungs—that is, the lungs were so full of blood thai the\ could not work, there not bein^ roou. enough for a quantity of air to entr t. support life. Tbe causes of sudden death being known, an avoidance of them may servo to lengthen many valuable lives which would otherwise be lost under the "heart complaint." This disease is supposed to be inevitable aud incurable hence many do not lake the pains they would do to avoid sudden death if tbey knew it lay in their power.
