plenty of
boiling water, and let it be boiling when the potatoes are pu in throw in a small handful of salt, cover up, and let them boil until they show a tendency to crack, or a fork will pass easily through them. Then pour off the water and let them stand uncovered near theft re to dry. If von wish to steam them, the pot may be put on the lire again and covered with a course oloth. I will give a few receipts for cooking potatoes:

potatoes, then carefully mash them. Boil in the meantime a pint of milk, nut in some lemon peel, a couple of small lumps of sugar and a little salt. When cool, make it into balls and cover these with crumbs of bread and yolk of eggs. Fry the*e to a nice brown color, and serve up with sugar strewed over them.

Cut thein in whatever shape you wish above a lwwl of cold wator, so they will drop into it. Then drain and wipe them dry. This must be done quickly so as iot to allow the potatoes to beoome reddish. Have a course towel ready then turn the potatoes into a colander^ sprinkle salt on them, and serve hot. If yon wish them light or swelled leave the potatoes in the colander, only about half a minute, then put them back in the very hot fat, stir for about a minute and put them again in the colander If the fat is very hot when dropped into it for the second timo they will swell.
