The detestable habit commenced abont 1850. when a round of hair could be purchased in raris for four francs. Afterwards when Kugenie acceded to ao much distinction, the price advanced to twice or three times that amount. Now the price has readied as high as ft fly-five francs for "unpr^parcxl hstfr alone, the price when braided and prepared for immediate use being enormous. This fkvorite Spring dish may be made wholesome or poisonous, inviting or disgusting, aooording to the skill of the cook. To make it as poor as possible cut the ham thin, don't take out much of the salt, fry it very brown take it out of the frying-pan and drop in the

and well covered with a brown sub^ stanoe. Cook the eggs until the yolfe* are hard and the whites of a dirty brown color, well crisped and frizzled. Place the eggs around the ham on a dish and pour some of th» half-burned fat overall. Then eat asmuch as you can and as fast as you can and it will not be the fault of this recipe if you do not feel uncomfortable. A regular course of ham and eggs cooked In this way. will ensure any amount of Spring lever, billiousness, dyspepsia, etc. To make a dish of ham and eggs as good as possible cut the ham nearly half an inch thick, boil it in plenty of water till barely cooked through, pour off tho water and put the pan in that place just enough to brown the fat part of the ham slightly, but not hot encash to make a smoke or to brown the lean meat much. When this is finished remove the frying-pan from the fire, take up the ham, pour off the fat into a cup and wipe the pan till it shines like a mirror, without a single speck to mar the polish. Then put
