HOTJ&EHOLD WISDOM.'

This is the season that tries housekeeper's souls. NO fresh fruits, and few vegetables. Poultry high, and meats often injured by being frozen. -^Fortunately, in winter, nutricious dishes are welcome, and pies and puddings, (baked and boiled) and various griddle ,•« cakes are in order:

CREAM SAUCE.—Stir together a tumblerfuLot rich cream, arid one of powdered sugar. Orate nutmeg over it. Serve cold with fruit tarts, f^ I

PLAIN TEA-PAKE.—Three teacups Tui lot dry sugar, ono fat butter, one of sour milk, three pint* of flour, three eg?*, a teaspoonful of baking powder. Flavor /to taste, roll thin, and bake in a quick oven. I,-! CRACKER PUDDING.—Pour over four soda crackers, a pint of boiling milk. -fWhen cool, mash well. Beat two eggs, ,add a tableepoonful of flour. Mix all ^together, ana boil one hour. Eat with "sauce. -1 BAKED ARPLE DUMPLINGS.—Make a 'rich paste. Pare and core the apples

Mil the cavities with sugar, and flavor with essence of lemon. Cover each apple with thinly rolled paste, and bake in a tin pan. Serve not, with rich sauce. •. APPLE CUSTABD.—Take half a dozen tart apples, peel and core them, cook in a little water until soft. Mash them very smoothly, sweeten and flavor to taste, beat in five or six eggs. Bike in puff paste. A gill of cream improves this, but add it last, as much stirring turns it into butter.

BREAD FRITTERS.—Cut stale.'* ligfit rolls, or rusks, in slices half an iuch thick. Beat two eggs, add a tumblerful of milk, sweeten, and flavor to taste. Pour this mixture over tue bread, turn the slices over, and when saturated, prop into boiling lard. Fry to a delicate brown on both sides, and eat with sauce or sugar.

SAUCE FOR PUDDINGS.—Two ounces of butter, a large tabiespoonful of flour, corn-starch, or arrowroot, two tablospoonsfuls of milk. Put these in a Btew-pan, stir well together when the butter begins to melt, add six table spoonfuls of hot water. Cover the stew-pan, let it boil up. When of the consistence of cream, pour it out and flavor to taste. Butter mixes best with milk, but in transparent aauoe.s water alone can be used.

Apples and Cranberries are the chief resources of puzzled cooks, and are quite worthy of the care and skill bestowed on them. Cranberries are healthy in every form, but most useful when well stewed in a little water. Tho sugar should be stirred in just before taking them off the (ire uud the berries well masbed. It put in a mould, they will turn out stiff, and of a lovely oolor. Thus prepared, they can be servod with roast fowl, gitne, blanc-mange, custard, cake, etc. For pios, more water should be used in stewing.
