°ytereTOMATO CUSTARD This is Raid to be a beneficial diet for consumptives. It is made by straining finely stewed tomatoes through a coarse seive, and adding two pints of milk and one pint of tomatoes, tor lour sggs and one teaspoonful of sugar. Bake in small cups, quickly.
HUOAR KOB GLAZING CAKES.
Put into a vessel with a little water tho white of one egg, well beaten, ana stirred well into the water let It boil, and while boiling, throw in a few drops of cold water. Then stir in a cup oI pounded sugar. This must boil to a foam, then be used this makes a bean* t«_ tiful glazing for cakes.
TO COLOR PICKLES.
'4 Don't nse a copper vessel for that Purpose and poison yourself. Boil together water, one gallon common salt, "ffi'two ponnds. Pour the hot solution 3 over the cucumbers and allow it to remain three or four hours. Then pour
Jj oil and cover with good vinegar, scalding hot. Let it stand three days, then W pour off, heat and return the vinegar, after which they remain undisturDed -w!until ready for use. This impaits a dark green color, and we know it is not poisonous.
TO i'UKSEUVB GREEN CORN.
y: J. H. L., of Salom, 111., says: For the benefit of our many readers, you will please publish the following for preserving corn for use at any time in the year. I have used it in my own family for four or five years, and have .had green corn ali the year, and so perfect is it kept that one is surprised at its natural flavor and the plumpness of the grain.
Take the corn when it is sufficiently jnatured for table use, remove the husk "from it, and boil it nearly as much as you would if you were going to uso it on the tubie let it cool cut it from tho cob, tako any sized stone jar, put the corn in tho jar with common salt first a layer of suit hall an inch, thon a layer of corn two inches pack closelj-, then half an inch of salt and two inches of corn until tho jar is filled tie a cloth over the jar and set it away. It will not form a brine, and will only take up a certain quantity of salt, so that there is no danger of putting too much on it. To prepare for use, soak over night in fresh water, remove the water in tho morning, pot into fresh water for a time, Stew and serve for dinner.
COOKING IN ENGLAND.
»'. The quostion of teaching cookery in public schools is now coming up in England with the high prices of food.
In lieu of potatoes, rice is recommended and we believe corn meal is another ingrediment that might be very
frofltable
and beneficially introduced
uto English households. Both these ftro cheap and wholesome articles of food, but ther acceptability depends entirely on their cooking. Of rice, as ol corn meii, it ought never to be offered alone. Both are too dry and tasteless but as bases for other matters flavoring them, thero are few things so choap and wholesome. But how are English households to be taught The East Indians would show them that rice is never oaten nlono, but ought only to be usod ah an absorbent of gravy, or with raonts or llavoring condiments and corn moal, in tho hands ot a dninty Atnorloan cook, offers many nioro extended opportunities lor a palntablo variety. With a little sour milk, or buttermilk, an egg or two, and a little lard, she can turn out such things, good, palatable, and agreeable, as have never yet boon known in Great BritIan, oven though she has been Importing corn largoly sinco the famino in Ireland, 1845-7. The people of Kugland liavo no conception of these benefits within their roach nor will thoy have until shown how to cook corn moal in all its moods. Perhaps no greater boon could bo conferred on the familios of tho throo kingdoms than by a sntart YanUeo man or woman who would go i, round looturiug to tho working classes,

One might as well put raw potatoes on the table as tho articles mado from corn whon first offered in Ireland. Evon during tnat dreadful famino year, miserable, starving wrotvhos were content to die rather than eat of tho tasteloss corn bread or mush presented to them by the humann but ignorant poor-law guardians. But indeed they knew no better. God's bounty was given to them, and they know not how to uso it.

HOW* THEY GET ACQUAINTED AT LONG BRANCH. A correspondent at Long Branch tells "How wo get acquainted"thus: Well, wo have all sorts of ways. Those who come hero without acquaintances will bo left to their own resources. If the
persons who have
been here a lew weeks previous, it is a very easy matter. A lady friend is an iuvaluable advantage to a young man at a watering plaoe. Ladles have such an easy way of becoming acquainted with each oiher, as they discard all formalities of introduction. The subject of grtting acquainted forms the most perplexing study to young people here. Some havo an easy way ol getting over it, while others it troubles greatly. Now, that couple sitting out in the summer-house had no triable whatever. On the evening of tbe voung man's arrival he
when he heard a young lady standing beside him say she wished she could get a dance. He Immediately offered bis services, was timidly but gladly accepted, and since that time—one week —they have been together like Wends of years' standing, and some say are engaged. I know of a young lady who makes acquaintances by silting on the beach making holes in the

The undersigned wishes to inform persons wanting Monumental Work, of any description, th*t he Is prepared to fill orders at a much less cost than has ever been offered to the public. Persons in the country wanting American or Italian Marble, or Scotch Granite
Monuments or Tomb Stones!
For deceased friends, will save from fifteen to twenty per cent, by coming to the shop in preference to buying of traveling agents, who are always on lareo, salary or commission, hence, I will make the above deductions on all work offered by agents, besides, persons will find it more satisfactory in making a selection from work already finished, or from Designs, than contracting with irresponsible, and very often rascally agents.
All orders filled of the very best material and workmanship. Satisfaction guaranteed in all cases.
