Hot soda-biscuit ought to be excluded altogether from the American teatable it is a rile compound. II biscuit sre Indispensable, (and we admit they area welcome change from bread sometimes), make them of light, raised bread-dough, with the admikture of a little butter bake them, and eat them oold. Cheese is totally unnecessary, and should not be eaten with butter by persons who have any respect lor their stomachs, while dry orackers may be classed with sawdust, so far as digestibility is oonoerned.

Wurm Indian bannocks, or light Rally Lunn tea-cake, make a nice relisli for tea, and crackors may be utilized by being dlppod in water or milk, hosted in the oven, and then buttered.

Cold meat is not healthful or digestible, except to very well-conditioned stomachs, snd when perfectly tender. Most housekeepers would And it advantageous to study methods of making it Into varied and palatable diahea, such as mlneos, croquettes, gravy pies, English and Irish stews, and the like. For all these gravy or stock is required —and It .there is none left, a few oonee will at any time furnish some, and should therefore not be thrown away, until they havo been put to this use.

Kvu's PUDDING.—Half a pound of apples half a pound of bresa-ornmbs a pint of milk half pound of currants six ounces of sugar two eggs, snd the grated rind of a lemon. Chop the appie small add the bread-crumbs, carrants, sugar, and lemon-peel, then the eggs, well beaten boll it three hours, in a buttered mold, and serve with sweet-sauce.
