Oat meal Is perhaps the most penorally used cereal, so a few suristions for its rookinp may be appreciated by the novice in its preparation. The amount of water nece.ary to add to the oatmeal to have it ripht is the fir?t point to con?ider. Uach praln should swell to Its fullest extent. One cupful of oatmeal requires one quart of water and a teaspoonful of salt. Just before serving add a small lump of butter and two table.epoonfuls of cream. Of course, the oatmeal should be cooked in a double boiler the longer tho better. Many cock it the day beforo and reheat it in the morning. If this is to be done it is desirable to put a buttered paper over the top to keep it from drying. If tho preoared cereals are used try this meth d. To one and a half cupfuls of ro! cd oats and two cupfuls each of milk and water, a teaspoonful and a half of salt. This should bo cooked at least an hour and a half. Cream, butter and powdered sugar are generally used with oatmeal, although pure maplo syrup make a delightful change. Fino gluten flour make a most appetizing breakfast cereal, and is not generally well known. Add a teaspoonful of salt to a quart of water, and allow It to come to the boiling point. When it bolls sift :n very slowly, stirring constantly, one and a half cupfuls of tho gluten. Stir until it is free from lumps, ar.d then cook about a half hour. Serve with sugar and cream. Farina or cream of wheat are cooked in the same general fashion. Scald a quart of milk, or water, in a double boiler, and add a teaspoonful of salt. 1 or 2 curs Sun-Maid raisins. 1 pint boilir.pr wator. 1 packap Jiffy-Pic lemon. 4 tablcpoonfuls sucrar. Cook raisins in boiling water for five minutes.
