As a dessert, any of the dried, cooked fruits may he beaten into a whip with egg-white and flavoring. Rakcel Ra nanas. Peel six bananas and scrape, then put them in a buttered baking- dish in slices. Sprinkle with brown sugar, dot with bits of butter, and also the juice of half a lemon. Rake for .10 minutes in a moderate oven. If desired, sprinkle a little finely powdered rinamon over the top for additional flavoring. Spionil Ininos. 2 cupfuls of cooked prun-s. 1-2 cupful of prune juice. 1-1 cupful of chopped cranberries. 2 tabkspoonfuls of sugar. 1-4 teaspoonful of paprika. 1 orange. 1-2 teaspoonful of rinamon. Fhop the prun s and mix with the spires, juice and gratings of tin orange and s'-asonlngs. Simmer together for 20 minutes. This is dlirious with any cold meat. Cranlwrry Jolly. Whole. t nipfulsi of washed cranberries. 1 cuptuls of granulated sugar. 1 1-2 cupfuls of water. Place together in a saucepan and let come to a boil, then coyer, but do not stir. Cook for 10 minutes, removing um occasionally. Tour into g!as serving dish. s t aside to cool. The cranberries will be whole. btjt very tender without any toughness whatever to the skin. Ilnkeil IVars. 5 dried pears. cupful cf suga r. 1-2 cupful of boiling water. 4 whole cloves. Soak the pears hi cold water a few hours. Drain, place in an arthen baking dish, add the other ingredients, and bake in a s'ow oven, '"'hill before serving. SU-wim! Roil water and sugar together, then add the thinly sliced or chopped apples ar.d cook until tender. Soften the gelatine in a little cold water, then ad 1 the lemon juico and crated rind of one lemon, and pour into the hot mixture.
