Close to the skin are the mineral salts, which are just as valuable as the starchy component of potatoes. If tho potatoes are pared thickly this will bo thrown away. Potatoes should not be pared, hut Kcraped, heinff held under cold water durin the process. With the new potatoes thin is very quiekly donn in fact, hometlmes a pood stiff brush will rcmovo from new potatoes the tlsu-liko .outer skin, ami then nothing In wasted. Xhw potatoes should be handlrd differently from old ones. Old potatoes uro thrown into slightly halted eold water and boiled until soft enough to pierce with a fork. New potatoes, however, should be thrown into boiling water ami salted when partly done. Twenty minutes should be huflicient to boil newpotatoes. When finished, drain off the water, then replace the cover of the saucepan and hat until dry. Now Potato Nails. 2 pounds of new potatoes 1 ttaspoonful of salt 1 tablespoonful of lemon juice 1 tablespoonful of chopped parsley J tablepoonfulu of butter 1 tablespoonful of chopped mint sV rape the potatoes and scoop out into balls with a potato . scoop. Foil until tender in water to which salt and mint have been added when partly cooked. Then drain. Melt the butter in a saucepan, add the parsley and lemon Juice, and heat the potato halls In this mixture for
