The sweetened layer cake so otten served with layers of strawberries and whipped cream is really not shortcake at all. The genuine article Is unsweetened and juepared more like pie than cake. Here is a basic recipe for shortcake which can Vie used with meat and fish fillinp as a main dish, as well as with fruits and other sweets as a dessert: Hasle ltoipo for Shortcake. 1 u cupfuls of Hour. -:j cupful of milk. teaspoonfuls of baking powder. 1-.1 teaspoonful of salt. v. tablespoonf uls id" shortening. Sift together the dour, salt and l.aking powder and rah in the shortening lightly with the finger tips. Gradually add th milk, mixing with a knife. Then spread on preased layer rake tins and lightly pr. t with the knife into shape. Or cut out with a biscuit cutter somewhat thicker than for layers. The layers require about 10 or 12 minutes in a hot oven. The biscuits being thicker will nv d lü mi antes. Then split open and fill. Strawberry Shortrako. Clean and hull one box of berries, setting aside the large, choice ones whole. The remainder mash and mix with surar to sweeten. Spread between hot layers of shortcake and sot asid" to cool. Before servinc spread the top layer with whipped cream and garnish with the whole strawberries. Other berries blackberry, raspberry, currant, blueberry may le prepared th-"1 same ty.iv, as other fruits also like bananas and peaches. Canned fruits and dried, cooked fruits may also be used, seasoning with sugar or lemon juice ;:s reqihred. Meat Short rake. 1 cunfuls of cooked meat, chopped cupful of chopped celery. 1 cupful of thick gravy. t tenspoonful of salt. 't teapsoonful of paprika. 1 to asponnf i:l of gra'cd onion. 'o teasponnfnl of dry mustard. Simmer these together for about 1 .. minutes then spread between the i r.ers of shortcake. If a thick gravy is not available prepare one of s'.mk thiekened with a roitx of n-'dted butter blended and browned with Hour. A pi do Shortcake. L' eiipfilN of sliced apples. I cupful of chopped dates. cupful of water. 1-r. cupful of sugar. teaspoonfu lof nutmeg. Simmer together th apples. dat-s. water and other ingredients until thick. Then spread between layers of shortcake. Serve with whipped crea m. For a guest luncheon the shortcake is more daintily served if prepared in the shape ( f individual biscuits rather than lavers. Flaked hsh. canned lobster, crab or shrimp hb-nded with a rich white sain - and seasoned litrhtly make a delicious luncheon dish. Heat the ;ish while shortcake is baking, and when the cake is finished split in half, and place each one on individual hot plate.
