Although we've eracefully acquired the Latin fondmss for ma - aroni and spaghetti, we are tili somewhat unfamiliar with another very commendable member of thf sinie pastry family noodles. Many good varieties of noodles are sold in packages, but noodles can be made at home. NoxkIU"i 1 tabb'spoonful of water. 1 -1 teaspoonful ot salt. Flour. Beat the ot. add the water and salt and flour enough ? ma Li a stiff dough. Knead well fur about threeminutes. Then roll oat. a thin as possible. If plain noodle are desired roll ti the dough as for a jolly roll and cut. very thin slices, shake o it these strips on a lare board and leave for Ti few" hours to dr. If fancy shapes ale desired use a tiny Nope table cutler on the llattened dough. These may he added to boiling, clear soup and cooked until tender, or if plain noodles are desired, simp!y cook in boiling, salted water, Iik- spaghetti or macaroni. But unlike those less delicate foods, noodles can bo made into a

Noodle Pudding. - upfuls of noodles. - eggs. -4 cupful f HJgar. 1-4 cupful of melted butter. - cupfuls of milk, 1-4 cupful of chopped alnioiuK 1 lemon. 1-1 tenspoonful of salt. Cook the noodles in boiling, salted water until temler. then drain. Beat the eggs well and gradually stir in the noodles. Place a layer of the nurture in a greased baking dish, sprinkle with sugar, chopped almonds, grated lemon rind and bits of butter. Continue with the layers. Finally add the milk and salt and bake in a moderate oven for one hour. Strut lopetl Noodles. - cupfuls of noodles. 1--' cupful of cheese.. 1-.". cupful of breadcrumbs. 1 cupful of white sauce. 1 onion. 1-. teaspoonful of mustard. Cook the noodles and the onion in boiling, salted water until tender. then drain. Add other ingredients, pour in a buttered baking dish. ( over with crumhs and dot with bits of butter- Bake in a moderate oven until brown. Chicken and Noodle. Chop cold chicken and place in a greased baking dish with alternate la.wrs of cooked noodles. Season with salt, paprika, and if chicken fat is available it is ever, better than butter for this dish. Moisten with lop milk, cover with breadcrumbs and bits of butter. Bake in a moderate oven until brown. Noodles nml lggs. 1 cupful of boiled, chopped mM les. 1 cupful of fresh mushrooms-. 1 cupful of milk. :'. eggs. 1 lablf spoonful of butter. 1 teaspoonful of chopped parsley. 1 teaspoonful of sail. .Melt th? butter, aud the mushrooms, and cook tive minutes. Add milk and noodles and simmer. Finally add the well-beaten eggs, salt and pepper- When thick add parsley and pour over toast points.
