We are criticised sharply very often because of a prejudice against the untried because we Htubbornly object to adopting food which Europeans have eaten for ages. Horse meat, frogs, whale meat and other queer foods ar- ured upon us and the American housewife remains comparatively indifferent. Food prejudice is not easy to thrust aside merely on someone's,
say-so. Much of starving Europe still resolutely refuses to welcome cornmeal, and surely this wholesome, cleanly grain arouses none of the automatic revulsion which some of the animal foods awaken. However, this much the American housewife does owe to the national food conservation program. Wc should all make a genuine effort to serve some of the. recommended foods in a palatable way mo that they will be enjoyed. I believe the criticism which arises against new foods is due occasionally to the fact that they are poorly prepared. Neither chef nor housewife being familiar with the food, it is incorrectly handled and the r suit is far from appetizing. lAsrn tlie Ways. I recall recently trying a "whale steak" In the dining room of a firstclass hotel where other foods were invariably delicious. Rut instantly I became prejudiced. While the mtat itself looked attractive, it was obviously poorly cooked and had no

He had laughed as heartily as any of us at Mrs. Durkee's nonsense, and I had seen him smile with genuine masculine admiration at the attractive picture the little woman made with her pointing forefinger and her pretty pout
