the present emergency will stimulate the method of food conservation. In this year of great food production, it is essential that some means be taken for the prevention of waste during the time of over supply. Advantages of drying are most apparent to the housewife who ha.s no cellar or other place in which to store fresh vegetables and fruits. When the markets are overstocked, she can lay in a supply, dry it and store it away for the winter without its taking tip much space. If she is accustomed to canning her vegetables and fruit and is unable to obtain jars or cans, she can easily resort to drying. Many times there will be quantities of food left over which are too small for convenient canning. A few peas, a carrot or turnip may be dried at a time and a quantity sutticient for a meal soon be secured. Small quantities of different kinds of vegetables may be dried and combined for soups and stews. A strong point in drying is the ease with which it ma be done. Nearly all kinds of fruit ami vegetables may e dried at small cost by means of the ordinary home utensils. The food to be dried may be placed on dishes in the oven, with the oven door partially open, or on the back of the stove while the oven is hemp used fot cooking".
