Directions Wash and dry the rhubarb (do not pkln). cut into very small pieces, put into porcelaln-lino.J kettle, cover with the supar, add the water, place over slow fire five minutes, stir until the sugar is dissolved; then hoil rapidly five minutes; add the raisins, which have been washtc' and cut fine, and boil slowly 40 minutes. He gure to remove the scum as It rises. Sterilize the glasses or Jars and fill while the marmalade ia boiling hot. When cool, cover. Sot r.way In cool, dark place for winter une. This amount makes three and one-half glasses. STEWED CHICKEN WITH rErrr irMiEE;s. Cut. the breast Into four parts, join tho thighs and wings; put into toiler with three pints boiling water, a small onion, ami boil slowly two hours; add one tablespoon salt, oneeighth teaspoon white pepper, one tablespoon flour mixed with a little cold water, and boil five minutes. Sere on platter with border of fluff dumplings, which are served Instead of potatoes and make a good substitute. Materials On? cup Hour. ' ne teapoon baking powder, one-haif teaspoon salt, one-half cup mllK, one egg. Directions Sift flour, baking powder and salt into bowl. Add milk and wdl-baten egg. Beat until smooth. Put the dough on chicken by tahlespoonful. Cover And boil rapidly for 10 minutes without removing the cover. Then remove duniplinzs with skimmer ami place around edge of platter. JAPANESE SAIaAD. Materials One cup rice, one tablespoon onion juice, or finely chopped onion, one tablespoon choppod parsley, two tablespoons chopped green poppers. one teaspoon curry powder, one-half cup French dressing or one cup mayonnaise. Utensils Howl, two measuring cups, teaspoon, tablespoon. Directions Line bowl with lettuce. Wash, boil, blanch, and drain the rice as usual. When cold put into ! howl; pour over the French dressing in which you have the curry powder, cnion juice, parsley and chopped green peppers. Garnish the top with fine strips of green pepper and serve. P. S. Mayonnaise put on in small portions add much to the appearsince. I'IjAN kei steak. Materials Two to two and onesalf pounds sirloin steak, or. teaspoon drippings or butter, eight cups mashed potatoes (one-fourth peck), salt, pepper, parsley. Utensils Pieoe of cheesecloth, knife, iron pan. piank. pastry bag, rose tube. Directions Wipe, remove the superfluous fat. put in pan and soar on both sides, using steak one and onehalf inches thick. Kuh plank with Jrippings or butter and arrange a border of mashed potatoes close to edge, using a pastry bag and rose tube. Remove the steak to plank, put in hot oven and bake until steak is cooked and potatoes are browned. Brush steak with a little butter, sprinkle with a little salt, pepper and finely chopped parsley.
