Another Class In Butter Making.
To Be Held In Purdue hi March. Last November the Dairy Department of Purdue University opened ite laboratories to farmers’ wives and other older persons engaged in batter making on the farm. As many as oonld be aooomodated, at the time, presented themselves for the wee i’s instruction offered. Women from twenty to sixty years old fonnd mnoh that was profitable and helpful. Iu addition to points gained in butter making they made new acquaintances and had a pleasant vacation from home duties. # The expression of approval by thoee in attendance at this first course, together with numerous inquiries from others who did not hear of it in time, or were unable to attend at the time, have prompted the department to offer another oonrse March 15 25,1904. Particular attention will be given to methods of ripening oream, scoring, and jadging batter, making a starter, testing milk with Baboook test, and study of hand separators. Lectures will treat of the bacteriology of oieam ripening, and cleanliness in the dairy, by Prof. Barrage; butter making and milk testing by Prof. Van Norman, cream ripening and batter sooring by Mr. Slater. At least half of each day will be given to praotioal work in the laboratory where eaoh member of the olass is expected to carry on the different kinds of work underthe direction of the instructors. This will inolude one or two churnings, printing and wrapping batter for market, making a starter; testing milk with the Baboook test and etndy of hand separators. In the laboratories are to be; fonnd Baboook testers, several; styles of oburns and butter workers, with six of the leading makes of hand separators, together with all the apparatus needed for butter making on lhe ordinary farm. Considerable attention will be given to sooring butter as is done' for conventions and in large markets. Members of the class are asked to bring a pound of butter with them to be soored.
Requirements for admission: Members of the olass must have had experience as farm butter makers. Beginners should take the ten weeks coarse. Date: Instruction will begin at 8 s. m. March loth. Don’t be lute. Get there the day before and secure j our room. Expenses: Tuition is free. A laboratory fee of $2 SO will bs charged to partly cover material furnished, breakage, etd. Board and room will ocet from $5 to 97, Tbe total expense for the term need not exceed $lO, exclusive of railroad fare. *
Applications should be sent to Prof. H. E. Van Norman by March 10th, as the sixe of the olaas will be limited to the number that oan be accommodated with the facilities at hand.
