Utter from a dairy farmer of long and extensive experience : "I'mLAOtU'iriA, 1st month, "2d, '03. "Esteemeil friend : Having been re quested by thee to w rit3 n a statement of the process of making good butter, I have to observe thnt goo 1 cows and rich pasturage natural grasses trrr-en grass and white clover are the essential basis, together with cleanliness and proper management. 'The proper management, as I con reive, would be to pkim the milk at all times within thirtv-six hours after being milked : and in order to effect this, a 1 small quantity of s ur milk should be ! put into each pan at the straining of the j milk. The judgment of the dairy- ! manager should regulate the quantity according to the atmosphere. When the , cream is skimed into the crearnpot it should be atirred morning and eveuiug until churned, which should be done ! every three days during the warm j weather, and all the year if the quantity j of cream would warrant it. Alter the j butter is broken in the churn to the size j of chestnuts, the milk 6hould be drawn j off from the venthole through a fine sieve, j and then a sufficient quantity of cold water put in the churn and tumbled a few times drawn o!f as before more water j put in. and tumbled again. The w ater should then be all drawn off", and the ' butter will then lay in a mass in the churn, w hich should be cut promiscuously about, for the purpose of receiving the salt, which should be a full pint for fifty i pounds, and the same proportion for less I or more. The butter should then be tumbled in the churn sufficiently to mix ; th suit. It should then he taken out of ; t'tc churn and lumped into pounds &i j nearly as possible, and sponged, weighed 1 and printed. A sponge of proper si.e. enclosed in a corase linen cloth, should j be pressed on eac'li lump until all the brine is extracted, before being weighed. : 'The most particular part of th. process is attention to the skimming and ) management of the cream, to prevent ; ranc idity from taking place before churn ing, for if the cream is bad the butter j must necessarily be bad. j HuMtU K.vc 111s. In September I threshed off the seed geetting about three bushels. I laid the straw n the grass, lotting in the rain and dew. The time of rotting depends upon the weather. Iu a wet season it is accomplished sooner than in a dry one. I think it took mine about three weeks last season.
