Of course, in such cases, the superficial portions of th cargo are entirely worthless for humnn food; and the remainder cannot be otherwibe than much deteriorated. But it is upon us, and now what its conaequences to health and comfort are to be is a matter of absorbing interest to nearly all classes of community. - I ii 1 I A number ot experienced miners ana iorwardors of this city, who have for many years . b.en oi-iigod in the trade in ths garden of the world for prime wheat andjlour. asaure i the writer that unless the grain is mildewed j or damaged otherwise than simply by germin-1 n.ion, tho flour produced therefrom is just asj white and just as fair, in appearance to the j eye, as though it had been manufactured out I of the most perfect grain. There is a loss of. from 10 to 15 lbs. of flour to the barrel, that is to say, sprouted wheat sufficient to make aj barrel of flour, would have produced, if the' gram had been perfect, 10 or 15 lbs. over that amount; so that if tho miller could sell the j product at the same pric, ha could not afford ( to pay as much for sprouted as for unsprout-l e j wheat. But he cannot stll it for so much, j unless he practices a deception upon the pur-' chaser, such aa no reputable dealer is willing' to do. Instances more than one are known j to us of flour manufacturers who called them-; selves reputable, and whose brand both in New Voik and Boston, was known on change , to be unsurpassed, have worked up poor wheat j into so called "Kxtra (ienessee;" but the bar-j rels were branded with an unknown, fictiti-, ous, or irresponsible name. Tha miller would no more have put his own brand on such an aiiiclo, than he would have sunk his fortune ia the bottom of the lak. j One wsfegnard, then, against a purchase of j inferior for'first class fl vir is to obtain a well ( known and responsible brand, such an one as mar be depended tipon; for the manufacturer know whether or not he is working up perfeet wheat, and can brand it accordingly. The flour cf grown wheat is deficient in glu-! ten, which is tho process of germination has, to certain extent, undergone a chemical change and disappeared. It assumes a new form under the name of diastase possessing new properties, and is endowed with new functions. It dissolves ia tepid water, and at a temperature of liOdeg. to HO deg. Fahrenheit, it converts the starch c-f the flour into grape suiar. Hence arises the peculiar but not un pleasant sweet taste of bread made from such flour. Under the ordinary Srocese of sponging aad raising the dough of our manufactured from sprouted wheat, the bubbles of carbonio acid generated by the fermentation break through the sponge and escape, causing the paste to sink into a heavy mass. The bread when baked bo unpalatable, indeed many people prefer its taste to that made from the best flour; and - probably the great majority of consumers would relish it as well if the product could be made equally aa light. ; Aside from the difficulty which the diseetive organs have to encounter in a snass of
clammy food, there is no positive unheakhi- ' nets connected with the use of this kind of

Cor. of an Ai' change. Keeping Sweet Potatoes. We have intended to write an article for oar present number ou keeping the Sweet Potato, but here is one which answers our purpose. Great care should be taken in digging and handling the potatoes not to break or bruise them. Also, construct the bins or boxes so that the air can circulate freely through them, without this .precaution, the potatoes will be likely to sweat, and the moisture thus generated will soon produce decay. Kiie. .Select fine days during the first and aoond week of October, and take the potoe from the hills carefuiiv, to as not to uilio them, let them dry thoroughly, but pecdily. either in thesnn, or spread upoaa floor under cover. The boxes or bin for stowing will be ia slis according to the quantity you wish to keep, but in no case over two feet in depth. fiaihera sufficient quantity of sand or fine road-dut, and have it thoroughly screened and dry. then spread itaa inch or two deep on the bottom of the box, and lay iu a course of potatoes from 0 to 11 inches thick, then pour in more sand until it fills all the interstices between the potatoes, to the bottom of tho box. sin .l : A ... Tf, several boxes are used, j they may be piled on the top of each other, j and in this ewe always with sticks to leave a ; space between, of one or two inches, to allow a free circulation of air. I In order to complete success in keepiug, it ' is indispcnsib'e that the boxes be stored in a dry room where a pretty uniform temperature can be maintaimed, the safest range being between 50 to CO 1'ah. A wider range, if not of too long duration, may not do much harm. Potatoes put up in this manner will i not be subject to loss of over 5 to 10 perceut re. . In this voung State there are to-day fifty thousand , Korses, a large number of milch cows, and . nearly as many working oxen, a hundred and seventy thousand sheep, and five hundred ! thousand swine; and the value of live stock , cannot be much short of five millions of dol-: lars. It now yields annually upwards of two million bushels of Indian corn. Iowa will certainly be the New York of the west ia an agricultural point. She has 4000 square miles of territory more than the Empire state, and has now only four or five persons to the square mile, while New York has nearly seventy. Iowa has a million and a half acres of good land unimproved. When all her agricultural resources are developed, when she ships her hundred million bushels of corn annually, by one or more of her "Pacific rail- j roads," to China atd the islands along the route, then will the Union feel enriched by the Iowa link in the bright chain of western ; commonwealths." This corn was obtained from the Wyandott Indian nation three year ago and last year was its first yield in Illinois a half an acre grown bv this Morsran county farmer. He sold tho seed at one cent pr kernel, last fall and winter, to persons throughout the State, and this year considerable has been grown. The ears are from live to nu;G inches long, and not so larf rouiid as the common Tarieiy. It is a fine pearl v white, and has bat little chit, and grind neirly all into meal. A chemical analrsi of its properties proves it to contain a Iftfi nor!
