Tilt NEW CHINESE POTATO: OB DIOSCOREA JAPOMCA. Our readers have, perhaps, heard of the nronosed new substitute for the favorite and In ad-' substantial esculent, the Irish potato. dition to the names above given, it has been called by some the Japanese Yam. and the j Chinese Igname. A. we have red the ac-! counU which European paters, agricultural: w.wf .trinA ,r mi.l h. - m a . . ..' , i . e i : reverted to me eany insiory oi me common ,o, tK..,J .- nd w would' suk the question whether, like its progenitor, ! the introduction of the new comer will be op-1 posed lor some two nunurea year: .ayccially, will the Epicurean Frenchman, who j dines so daintily on fried and stewed and ! toasted unmentionables, require the horrors j of a threatened famine to drive him to the j - 1 1 1 L' - tato, as it did the cauii ui j ' South American? We have lately seen that certain French savens have discovered by annlvia. some iniurious Droorieties in the comnion potato, and that they ascribe the physi- j cal degeneraracy of modern turope to me i eatirirrof this vegetable. "Physical degen-j eracy!" What nation is more hearty and j rug; 'ed than that which is mot devotedly fond of ti e potato? Aye! The Jrrenchmau liken rood livin", and a variety; and he is! alttiiily trying to smooth his way, scientincai i ly, to the enrollment of this new veget iciuie i ju his bill of fare. We would like to ku OU lilS Ulil OI lare. wi e wijuiu lisc iu a itun , r .. A 1 also, whether the Irish population will relish , this foreimer? Will it it as well on their! stomachs as the old-fashioned root does, on j whioh the very image of St. I'atiick seems i inscribed? Will they uot say It smacks of frogs aud rats and mice and Will it, like our acquaintance heathen idols? bake and boil and stew and fry; will it help to make bread j and even yeast and starch and cheese and pickles? And, not the least irn-j portant, can any of its properties be perverted j into intoxicating liquor? That must be a great acquisition, indeed, which can supplant ' the common potato, or even come in competi- j tion with it. j 1 . Let us proceed to gather tip the princi-1 pal facts in the history of the famous Diosco- j iea. It is a native of Japan and has been t long cultivated there and the North of China, j in trriat quantities, and forms the common food of all class s, during the entire year. It j was first introduced into Fiance in the year j 131'J, by M. Montigny, French Consul at Shanghic. It was presented to him by a mis- j sioiiary. It was then sent to the Jardin des ' J'lanin, for experimental cultivation, but as it1 did not flower, it remained untouched until the year 1853, when M. Montigny returned; to France. Surprised to find this valuable ariclo as yet comparatively unknown, he began at once to enlist in its behalf the attenticn of, II. l'alliet, a zealous horticulturist, who prop- j coaled 850.OOO plants the first year. In' J urie last, ha sent a pack age. of roots to the, great horticultural exhibition in Paris, and , gained the "award for the introduction of the j most useful plant," and received besides from ; the "Jlinistrie do Agriculture," a present of j 3,tM'0 francs. "Some of the roots weighing! two and a half pounds each, were presented j to his Maiestv the Luiperor. by whom and Lis Court they were eaten, and pronounced j excellent: after which M. l'alliet received an order for 40,000 plants to be distributed ! Iliioughout France." Mr. J. Henderson soon j aKer introduced it to cultivators iu f.ngland; and we learn, it is now for sale in small quantities by Mr. D. Ball, of New York city. F9 2. A lew words as to its qualities and meits. In growth aud outward appearances it reiembles the sweet potato, but it excels that in hardiness and keepiug qualities. It is in fact a yam. It is finer grained, and more nu- ( trici us than the common potato. The roots ' are white, and iu the interior they contain no ' apparent fiber; and when well cooked, they 1 are so tender as to form a paste like the finest ' wheat flour. They possess another quality, ! which housewives highly prize, viz: that of, cooking rapidly. An average-sized Dioscorea will boil in fifteen minutes, while the common I potato requires from twenty-five to forty min-; utes. This saving in time and fuel is no small consideration. It may also be preserved long- j er; it has been kept in cellars a whole year, ; without any starting of shoots or loss of , weight. It sufTers neither from heat nor cold; if left in the ground all winter, it comes out fresh and sound iu the spring, and is fit for eating and planting. ' 3. In conclusiou let us add something re-: spocting the cultivation of the Chinese pota- J to. The ordinary mode practiced in China is ! the following: "The earth is formed into ridges, when small tubers or portions of large; ones are planted on the top, at about three feet apart. After the plants have attained a luue strengwi me snoois are spreaa over me ..ia-r o. oo" " - . leaf end. six or eight m;hes trom each other, j (care being taken to cover the joints so pegged down, with a portion of earth.) when j they soon strike root and throw out tubers. ! y this means immense quantities of roots, I of the size of kidney -potatoes, are raised on ' A comparatively small piece of ground. But to obtain them of large size, small tubers or i portions are planted on ridges at ten inches to one foot apart. The vines may be trained on poles, eight or ten feet high, like beans, or j they may be left to run over the ground. Iu September they will turn yellow, showing the maturity tf the tuber. The root will now be 1 found to weigh a pound and upwards, and may be taken up and stored away for use." From tacts like these, it appears that the Dioscorea possesses the following excellen-; cie: 1. In flavor and nourishing proprieties, it. is superior to the common potato. j 2. It yields a greater product. j 3. It is free from the disease of the com- j nion potato. ! 4. It will grow and flourish on a poorer soil. I 5. It is cultivated with greater ease. 6. It may remain in the ground during: winter without liarm from frost. 7. It may be kept ia cellars without sprout-1 iag, or any other kind of dettajioration, for; a entire year. j Surely, this is enough to say in favor of , any new thing at one time. rVhether these statements which we give from good authority, will prove to be strictly correct, its general culture in this country alone can show. "We hope its propogation will be sufficiently extended this season, to enable us to lay further, and reliable information in regartd to this plant before our readers. Mob Fixk Stock for KKjrrrcsr. Mr. R. A. Alexander, of Bourbon county, Ky., on ship-board returning from England, writes a v.ry interesting letter to the editor of the Ohio lamer, giving an account of his visit to the English herds and the Royal AgricuJ. tural Show. Mr. A. has been the largest importer of Short-Horns ia America. He now adds to his former imporUtionory-tA head f cattle and rWny ux of sheep. The sheep are South-Downs. The largest portion of the cattle are Short-Horns, but among the number are few Alderaeye and Ayrsbiree.
Oat of Debt in Debt Who in doing Well! f
We do Dot counsel farmers to run in debt. ' But it should be understood that one may be out of debt, and yet doin" badly; and that an-' other may be in debt, and yet doing well. t The lamest point in New England farming is. ! the reluctance of farmers to the employment . r ... I - a 1 ft. Z I,. a. w .sf n.tvl tn capita! in uieir uuHnesa. xcncru.u than not have money to improve the farm with. j Let us illustrate. ' i Ten years ago A. and B. bought each of. them a farm, each farm containing about a! -0i riavinrr a litfT tnu lanii i ? -------e 7 considerable that was capable of being made good, but more that must always be poor. The buildings in each case were too old to think of occupying long, tioia gave ine same price; paid down, and had a few hundred dollars to purchase stock and commence operations. A. has hired no help couldn't afford it. He has been diligent with his own hands; has rout ud a threat many fallen rails, out has i r f J ' brought few from tho woods; has mended a great many old walls, but made no new ones; he raised riretty cood crops on the little good land be had, but has made not an acre of good land outoi poor; nas occupied me same uuuu-; ings, but has not much improved them; has lived, by making hi own wants and those of his family very small. He still holds the farm, not improved in value, but clear of debt; and if you were to pass by vou would know It, lorit lias noi airerea mucn. a mis lime ne nas kept a yoKe oi o-ien auu a norse, uul lias l- t ... 1- . . , . .1 I ... ...... I ... I . tiau nuin lur viiciu v uj iimu iiisii ui bu time; and he has paid perhaps two-thirds as much for implements, as if he employed more hands to use them. Could an original be found for this picture? B. begun by hiring two men 8 months in the year. He saw tliat the farm was not good enough to enrich him, perhaps not to snpport him. unless he could make it better. There were lands so lull oi water tnai iney cou u I produce nothing of value till drained. Others, ; with a strong soil, were so full of stones that the labor of working them would equal the value of the crops. There was wanted several hundred rods of wall, from three feet unaer ground to five feet above, for the threefold purpose of stopping the cattle, draining, the soil, and swallowing up as many stones as possible. Other fences must bo removed. Better buildings were necessary. His own hands could not do all these things. The crops, from what little feasible land lie had, would not pay the extra help. What should be done. Perhaps the increased productiveness of h's improved lands would pay the debt, if he should incur one. He ventured. For several years he expended on the farm . more than its iusome. His farming ran him in debt. But now he has a good farm. Broad fields are cleared of stones and thoroughly walled in. What were useless bogs are productive meadows. The whole farm is fenced somewhat above the requirements of law. New and substantial buildings are just com- : pleted. All this has been done by degrees, cautiously, but as fast as he could see the way clear, and now he owns that farm, doubled in value (could sell it to-day for twice as much as A. could his;) and although not quite clear of debt, he owes less than half as nuchas his farm has increased iu value. All this time he has paid larger taxes than A.; has done more to keep business astir in the place; has given away more; has been no sharper in buying; and has spent less time in getting the last cent than a thing he had to sell was worth. Could there be an original found for this picture? If there could be a hundred originals found for both these pictures, and we think there might, then which of the two is doing best, the man who has always kept clear of debt and is clear still, or the one who has always been in debt and is not yet out? The time has been, when farming could be done, in a poor sort of a way, without other capital than that invested in the land. But that time has gone by. We do not mean to say that a man must be rich in order to farm successfully. May that time never be. But in the progress of things, the time has come in this country, as it came in others long ago, when a floating capital, equal to nearly half the value of the land, is almost as necessary as the land itself. In order to reclaim our waste lands, while at the same time we are cropping our fields already good, we must hire labor. The labor niut be paid long in advance of the return to be expected from the improvement. Hence the necessity for capital (borrowed, if it must be) to fill up the interval. Mass. Farmer. The brilliant verdure of a tropical clime, freshened by oft-recurringshow-ers from the clouds that hung in sublime and fantastic forms about its mountain summits, rendered it delightful as Eden. The happy natives, unvexed with toil, gathered from nature's bountiful stores what satisfied their simple appetites, of fruit, or fish, or fowl. Light-hearted and careless as the winds that murmured in their forests, they dreamed not of the horrible doom impending over them. Some time previous to the eruption, strange mutterings were heard within the mountain, and deep sighs, as of a giantess in travail. The lovely island shuddered in conscious dread of its quick-coming destruction, and air and sea moaned and shivered in trembling sympathy. The fatal morn arrived, and the sun, looming up from his ocean bed, looked brightly upon a scence of beauty, soon, alas! to be blotted from his sight. A death-like stillness hung upon the waters. Not a ripple broke along the beach. The fountains ceased to flow, rushing back in affright to the secret sources in mid-eanh. A stifling oppressiveness settled down upon land and sea. Natu: e held her breath. A sob, a groan from the very boom of the rock-ribbed earth, and louder than the mingled roar of a hundred thundtring hurricanes the pent-up wrath of the volcano burst forth.
