Do you know how much you should eat to reduce? How much you should eat to gain? How much you are eating? If you are exactly the weight you should be or. rather, if you are satisfied with your present weight then those questions may seem foolish. But if you want to reduce or to gain, you will find that the subject of food quantities and food value is a most important one for you to study. You can, if you wish, find out to within an ounce how much food you should consume every day to gain or reduce your weight. This is done by a simple process of multiplying your ideal weight by captain figures worked out by physicians, and the answer will be the number of calories of food you require every day. If you eat more, you will get' fat; less, you will lose weight. . . . .. A Calorie is a Measure A calorie is nothing more than a measure. It bears the same relation to food that the foot-rule does to distance. In other words, it is a means of measuring food value. Most

foods have a nourishing value. For

the sake of simplicity and accuracy this value is expressed in calories. But

there are many necessary elements of food which have no nourishing quali

ties and which, thersfore, have no caloric value. Vitamines cannot be

measured, and yet if they did not ex

ist we could eat and eat and still die

of starvation. Nor have the necessary mineral salts any caloric value. It is not absolutely necessary for you to learn the caloric theory if you wish to reduce, but it is desirable. If you study it you will find that reduction will become an amusing game. You must consider food simply as calories and think of every portion as so many calories of nourishment. The number you require depends upon your age. weight and general activity.

A youth, 12. years to IS, requires

2500 to 3000 calories of food daily

An adult woman requires 1600 to 3000 calories of food daily, depending

upon the activity of the woman,

An adult man requires 2000 to 4000 calories of food daily depneding upon

the activity of the man. Caloric Value cf Various Foods

Now in order to determine what

food you can eat to furnish these ca' ories daily, you must consult the fol

lowing table of caloric values. Unless

otherwise stated, the number of calories given is for an average helping

of the food.

MEATS Lean beef steak, 185 calo

ries; tenderloin, 2S5; roast beef, 150;

roast chicken, ISO; lamb or mutton

Five hundred calories of food value

is equal to about 2 ounces of fat So

if you cut down oOO calories on your diet every day, you should lose about 2 ounces of fat per day and vice versa if you want to gain flesh. This will mean one pound every eight day3, which is as fast as you can expect to

reduce safely.

For the thin woman ' This list of food values measured in

calories, of course, is as valuable to

the thin woman as to the fat The fat woman learns from it what to

avoid, and the thin woman can judge which foods are most fattening.

If you are thin and cannot drink

milk, I advise malted milk, which costs little and can be kept without ice. Two tablespoonfulls in a glass of hot water is as fattening as a glass

of the richest milk. One tablespoonful of olive oil contains more than 100 calories of nourishment; while the emulsion of oil on the market have the same fattening value and in many cases contain ingredients which stimulate the appetite and make you fat by causing you to eat more food. , The thin woman should eat plenty of bread thickly covered with butter; should drink cocoa in preference to tea or coffee, should eat something simple and nourishing between meals; should get at least nine hours sleep nightly in a room filled with fresh air, in addition to an afternoon nap if possible, should strive not to fret and worry and over-do. How Many Meals?

Most women who .want to reduce

ask how many meals they can have.

Any number they choose if they do not eat more than a certain amount of food every day. The value of the

caloric system is that you can deter

mine exactly how much nourishment

you can take each day and maintain or reduce your weight. If you have found that in order to reduce, you

should eat only 1200 calories daily,

you may divide this into six meals of

200 each or take it in one big meal,

except that this would be hard on your

digestion and very unwise. The best way is to begin the morn

ing with an orange and a cup of black

coffee (orange juice regulates the sys

tem ami coffee stimulates the nerves)

This meal has a caloric value of only 100. An excellent luncheon would

consist of boiled or poached eggs.

This uses up only 200 to 300 calories

and permits you to have a thoroly satisfying dinner of from 800 to 900

Don't eat ham, pork, bacon or the

fat part of any meat; don't eat pota-

toes, dried beans, corn, lentils, rice

or macaroni; don't eat any kind of

bread or biscuit except that made with gluten flour (or at least white

bread toasted very dry) ; don t eat

cereals of any kind, pie, cake, pudding, custard, ice cream, candy, su

If you think I am robbing you of everything, remember that indulgence in these foods is why you' are overweight! You can still have fish and fowl and any other kind of meat, all

fruits, all salads except those made

from the listed vegetables, meat jellies and many relishes and green veg

etables. I am simply taking away most of the sugar, oil and starch from your diet .... If you are too stout and want to reduce, and yet feel that you simply cannot give up your favorite dishes, you might try some of the following means for growing slim. Exercise should be part of any reducing program, not only because a certain amount of fat is burned up by the exercise, but because it keeps the entire system in a healthy condition.

If you can belong to a physical

culture class, you will find that the best way to exercise for you will be put through a strenuous program, and

you can take a hot and cold shower

immediately afterwards. Or if you can get to a Turkish bath. you. will

find that a lot of superfluous flesh can be literally, sweated out of you in

the steam room.

If you can do neither, brisk walking

with a long stride will exercise most of the muscles in your body. Even housework, if done with an immense amount of energy and speed, will become a reduction exercise. Also,

there is nothing healthier for either

the fat or the thin woman than a

course in classic dancing.

There is no fast rule as to what

time of the day exercises should be taken. Generally speaking, it is better to do them in the morning as soon as you get out of bed and to follow

them, since they make the skin active, by a warm bath. However, if you have various household duties to attend to, it is much better to get these

done first speeding up on your work

as much as possible. Routine house

work done in a nervous rush, is itself

a reduction exercise. Here are some

others :

Stand with the feet together, arms

outstretched at the "side on a level with the shoulders. Describe large

circles with the hands, swinging the

arms round and round and doing this about 50 times. This is splendid for round shoulders and fat backHolding the arms outstretched as

before sidewise, first to the right, then to the left 10 or 15 times. Put the hand on the hips and revolve the upper part of the body about 10 or 12 times. To be most effective,
