iiMMh,

What Self-Rising Flour Is Self-rising flour is a high grade flour which has been blended with definite percentages of seasoning and leavening in scientifically accurate proportions. THE SEASONING The seasoning is the finest grade of table salt, such as is required for all oven products. THE LEAVENING This is pure phosphite of inestimable food value. THE VALUE OF PHOSPHATES Phosphates are normal constituents of both animal v and vegetable food. It has b.een demonstrated by eminent scientists that : animal life cannot exist

without a supply of these phosphates, since they not only go to make up an important element of bodily structure, but play an essential part as well in the process of body nutrition. PHOSPHATES IN THE WHEAT, BUT NOT IN THE FLOUR A wheat kernel contains phosphates. Nature has placed them close to the hull of the kernel. The consumer demands a flour free from . bran. The modern milling process supplies this, but in removing the bran; it also takes away the phosphates so important in food value. V THE LOST PHOSPHATES REPLACED IN SELF-RISING FLOUR The phosphate leavening used in self-rising flour restores to it lis proper phosphatic constituent. The phosphates are there blended in precise percentages and perform a two-fold task: "They leaven the biscuit, giving the light cellular structure required to make it palatable and easily digestible". "They increase the qualities of nutrition by supplying the phosphates required by the body." WHAT SELF-RISING FLOUR MEANS TO THE CONSUMER It means an article which has a scientifically accurate baking efficiency and, at the same time, one that offers the dietary advantages ' of a whole wheat flour without its disadvantages. : . Use the Liberty Mills Self-Rising Biscuit Flour daily for Biscuits, V; Dumplings, '.Muffins, Pancakes, Shortcakes, Doughnuts. For sale at all groceries.
