MOUNTAIN WOMEN ARE BEING TRAINED TO COOK GOOD FOOD

(By Associated Press) LEXINGTON, Ky.. Dec. .13. Women of the mountains of eastern Kentucky are. rapidly being trained to cook better food and to make pretty, practical clothing, according to Miss Mary E. Sweeney, former head of the department of home economics of the University of Kentucky. Miss Sweeney resigned her position in Kentucky on Dec. 1 to accept a similar place at the Michigan Agricultural college, Lansing. Mich. Miss Sweeney was the first head of the department of economics at Kentucky and was in active charge, with the exception of a few months during the World War, when she was in the Y. M. C. A., canteen service under fire in the battle of the Argonne. "Our efforts with the mountain women." said Miss Sweeney in telling of her work, Hhave been aimed at

teaching better cooking and the mak

ing of pretty useful clothing rather than teaching them to make money. Teach Cooking. "Our agents and demonstrators have gone through the hills and valley on foot and on horseback teaching eoeking and dress-making until today

the change is quite remarkable al

though not yet what we want it to be. "We have not at any time aimed di

rectly at helping the mountain woman

make money through her home work. But it has had that effect in some instances. For the mountaineer does not raise enough food even yet to support his family. But in small instances our teaching has had the effect of giving women more money through efficient buying and making thejr own clothing rather than buying them ready made as in the past." The first work done, according to Mire Sweeney, was to teach canning and preserving of the food that was available. Now the women are being taught cooking and to make tho right kind of clothing. Sanitation and health rules also are taught. Learn to Sew. In McCreary county many groups are learning to sew and at each school the school lunch has been introduced with a view to teaching the proper diet for children. In other counties, Miss Sweeney said, the time has not yet come for introducing school lunch. The work has extended into 20 eastern Kentucky counties, four of which Laurel, McCreary. Whitley and Muhlenberg are distintcly mountain counties. Miss Sweeney said. Most of the others are what are known as border counties. "The transportation is very bad and I have been marooned for three or four days by torrential mountain streems after rains," said Miss Sweeney. "Then the only way I got out was to swim the mule I was riding, through a dangerous stream."
