WINTER PRESERVES " Grapefruit Marmalade One large grapefruit, three cups sugar. Wash

the grapefruit and cut In half, the same as if you were going to serve it; remove the pulp with a teaspoon, set

in cold place until ready to add the peel. Cut the peel in quarters, remove the whole fiber, put peel in an earthen bowl with two quarts of cold water and let stand twenty-four hours, drain, cover with fresh water, put on and boll until tender. Press between the hands to remove all water, then put through food chopped (coarse cutter), then add the pulp with the sugar

and put on and boil slowly one hour!

or until it thickens. Orange Marmalade Three thinskinned oranges, one cup sugar, two tablespoonsful lemon juice. Wash the oranges, cut in half and remove the pulp with a teaspoon. Cut the rind in quarters, then remove all fiber; put the rind in two quarts of cold water for twenty-four hours. Drain, cover

with fresh water and boll until tender. Drain, press out ail water; shred very fine, add to the pulp; add the sugar and boll slowly one hour. You can put the rind .through food chopper and add the lemon Juice to the rind. Amber Marmalade - One large grapefruit, one orange, one lemon, six pounds (twelve cups) sugar.

Cut the fruit In quarters, remove the fiber and seeds from the center; then shave very fine the pulp and rind together. There should be four cups of fruit; put Into bowl and add ten cups of cold water; stand away for twenty-four hours, then add sugar; boil slowly three hours or until it Is the consistency of jelly and clear. '
