GRIT OF YANKS IS PRAISED BY WARjECRETARY American Soldier is Always a Gentleman, Baker Tells Association.

ATLANTIC CITY, Dec. 13. Newton D. Baker, secretary of war, was the principal speaker at the joint session of the American Hardware Manufactures' Association and the Hardware Jobbers' Association, held today in the Marlborough-Blenheim. Mr. Baker paid tribute to the cheerfulness and grit of the American soldier, and praised industry for the way it had stood back of the troops. "It would make every American's heart swell with pride," said Mr. Baker, "if he could see the American soldier in France as I saw him. He is young, smooth shaven, tanned, virile in health, and lithe, always animated by the inspiration of his ideals, and sometimes grimy, for they are billeted everywhere, always in a manner that would cause the least inconvenience to the French people whom they were living among. I found that the American soldier is always a gentleman. "When we saw him at home in the factory, or the grain field, we never suspected what were his thoughts. It required the composite army to develop the spirit which has knitted the American people closer together and made each section better acquainted with each other." He told a story of an incident that happened while his train was halted near a rest camp." A grimy soldier who, he ascertained, had been living in the woods with his command for a month, stuck his head in the window and remarked, "This is pretty, soft for you." ,The war secretary replied, "Would you change places?" "Not on your life," was the instant reply. That, he Baid, gives you an insight of the feeling of the soldiers of America. Nothing had impressed him more than the prevailing cheerfulness. English kings once forbade coal to bo burnt, on account of the smoke and a belief that coal fires were un-healthful.

Exploitation of potato flour and the possibilities of its manufacture in the United States gave nationwide interest to the recent Wisconsin Potato Exposition in Milwaukee. The United States government is actively interested in the development of the industry. Congress has appropriated $250,000 for dehydration and flour manufacturing experiments and the government recently began operation of a sweet potato flour mill at Greenville, S. C. Louis D. Sweet, of the national Food Administration and president of the Potato Association of America, and Major S. C Prescott. chief of the

bureau, Chemistry di

vision, Department of Agriculture, made addresses at the exposition on the new place of potato flour in the food program of the nation. "The value of potato flour has been brought to the attention of the United States by the war," said Mr. Sweet, "Germany and Holland formerly were the chief centers of manufacture. The flour was never made in this country befo-. s the war. Now there are eight mills in operation. The industry will open new markets to the farmers. Housewives and bakers are rapidly becoming familiar with the value of potato flour. Capitalists are awakening to the possibilities of the new field. I expect to see potato flour mills spring up in a short while in every big potato growing district in the United States. Potato flour manufacture. I believe is going to revolutionize the agricultural situation in the United States and become one of the nation's leading industries."
