FamUy of Eight Fed at Cost of Dollar a Week Per Person
Kansas City Star. One of the charitable organizations of the city is feeding a family of eight persons, consisting of the mother and seven children, two of whom are bottle babies. The husband and father Is dead.-' . . . ; . The following balanced rations for one week were tested out, and the average cost per person for the week was 98 cents. The largest single item of expense was 12 bottles of milk at 12 cents a quart. The food materials were purchased at cash stores: Monday: Breakfast Oatmeal, milk, bread and oleo. Luncheon Cabbage boiled dinner with salmon, corn bread. Supper Corn fritters, syrup, barley coffee. Tuesday: Breakfast Apples, whole wheat muffins, oleo. Lunch Bean roast and oleo. Supper Barley and milk, bread and butter. Wednesday: Breakfast Corn meal mush' with milk toast. Lunch Carrots in cream sauce, macaroni and cheese, whole wheat bread and syrup. Supper Rice and celery soup, bread with butter or oleo. Thursday : Breakfast Oatmeal, whole wheat bread and milk. Lunch Cabbage boiled dinner with coup meat and corn bread. Supper Corn fritters with syrup and coffee. Friday: Breakfast Apple sauce, muffins and coffee. Lunch Baked potatoes, creamed codfish, turnips. SupperOatmeal soup and corn bread. Saturday: Breakfast Corn meal mush, milk toast. Lunch Cow peas seasoned with salt pork, cabbage slaw, bread. Suppei1 Celery, and rice soup, toast, croutons. Sunday Bran pancakes, barley coffee; , Lunch Two pounds chuck steak, baked potatoes, carrots, bread. SupperBread and milk. A few of the recipes are given: Cabbage boiled dinrer Take a head of cabbage and cut in quarters, thin in smaller pieces. Boil in salted boiling water and when almost tender cut in six potatoes that have been scrubbed clean, one onion and a small' can of salmon, one tablespoon of oleo or cooking oil. to taste. Cook for about an hour, the barley and rice to take about two hours. When tender add a pint of milk, one teaspoon of butter and serve right away. Do not let the milk boil or it will curdle. The same soup is made with celery. Cut a stalk of celery into the soup in the beginning, including leaves. Add milk before serving. ' Bran pancakes Take one cup of Iran and one cup of wheat middlings and mix together. Add to this one teaspoon baking powder, half teaspoon of salt, mix and add one egg and a cup of milk,: two teaspoons syrup. Fry spoonful at a time in hot oil. . .,, ..Cost of Food.
