SUBSTITUTES FOR WHEAT FOR HUMAN FOOD . m ii mi m i i n i hiii .- j By P. Q. HOLOEN. WE MUST learn to use substitutes for wheat It Is hard to chang ' our methods of doing things, but the war will compel us to save, and the lesson will be a valuable one. Rje, barley bnckwheat, oatmeal, rice, corn and potato starch may aU be used tor this purpose, by substituting them for various proportions of wheat flour. A splendid, wboJtsome bread may be made by using; one-third commeal and rwo-thlrds wheat flour. One recipe Is as follows : One and one-half cups milk or water ; H cake compressed yeast i tea spoons salt; 1 teaspoon sugar; 1 teaspoon fat; 1 cup cornmeal; 2 cops when I

flour. Soften the yeast lu lA cup of

cornmeal, salt, sugar and fat for 20 minutes; cool and add the yeast; allov to rise until it doubles its bulk; make Into a loaf; again allow to rise; bake. The ways In which barley, rye, oatmeal, riee nnd potato starch con b used tn making bread are given in bulletin issued by the TJ. S.
