The surgical dressing classes at the
Red Cross rooms are so large they will be held on the second floor of the Masonic Temple in one of the Commercial club assembly rooms. Many persons re knitting these days and instructors are at the association rooms each afternoon. Four hundred hanks of yarn have arrived. Sweaters and mufflers are needed. A shipment of articles will be made Monday and persons Laving garments are asked to finish them before that day. Collection of last payments for the Red Cross war fund are being made and should be in by November 1. if possible. The city has fallen behind the county in payments. The GermanAmerican Trust company still has a number of unpaid pledges.
FRYING POINTERS There are certain kinds of food that are delicious when fried In hot fat. and when frying is properly done, and not harmful to stomach or com plosion. Fried edibles have fallen Into disrepute because so few cooks know how to fry correctly. Sogsy, greasy. Indigestible results follow the average experiment with hot fat, and in many families foods are served only baked, boiled or sauteed. Frying, when properly done, is Immersion In smoking hot fat. .The fat must be deep enough eo cover enteirely the articles to be cookod, and the same fat may be used over and over each time straining before It Is set away to cooLIt is not necessary to bring fat to the boiling point; It must merely be smoking hot When it begins to smoko drop in a bit of bread. If It browns while you count forty the fat Is right for croquettes, fishfalls oysters; if It browns while you count vixty it Is right for doughnuts for potatoes. All articles to be fried should be slightly warmed and thoroughly dry. If moist or too cold the fat 1b chilled and soaks into them this accounts for the greasy, soggy, indigestible condition of much fried food. There is danger also as the fat reheats that the water from moist food will make it boll over and spatter tho
stove or your clothing. Be very care
ful not to let a drop of water fall Into a kettle of steaming hot fat The best way Is to have a frying basket in which all the articles can be cooked at one time. ' Plunge the basket into the hot fat and rinse it quickly If the fat begins to boll over. .Fishballs and croquets should brown perfectly in one minute. Fritters require a longer cooking. Keep a tin plate in your left hand and hold it under the basket or ladle as
you remove articles from the fat and
place the-trtlcles immetliieiy oa coft, unglased paper until ready to serve. Never pile fried croquets, oysters or doughnuts, one on the other. Keen
them separate eo that they may re
main crisp ell over.
THE TABLE Beefsteak and Onions Broil or fry a nice steak. The onions should be
cut in thin slices, soaked In milk tor
ten minutes, dipped In flour and Immersed in boiling fat hot enough to brown them instantly, as you cannot keep the slices wholo after thoy are cooked six or seven minutes. Tako onions out with a skimmer, lay them on paper for a moment to absorb every vestlbe of grease. By this treatment they remain firm and are 'thoroughly delictus spread ovor the steak, which should be rare, juicy and piping hot Set In the oven a moment to let the onion flavor permeate the meat, and serve at once on a hot platter. (If you
have doubt as to the tenderness of Btenk, brush with vinegar and olive oil, using one tablespoon of vinegar to two of oil.) Do this at night and by morning the steak will be quite tender.. ' Odd Cookies Make your favorlto chocolate recipe dough, then another lot of white cookies flavored to suit your taste. Roll out on a board a sheet of white (not too thin) and lay side. Now roll out a sheet of tho chocolaie.'lift carefully and lay it uponthe white pressing gently. Now roll up tho mass like a jelly roll, cutting slices- from the end with sharp knife. They will bake in rin of white and chocolate and provide a delightful novelty. Economical Soup Four medium potatoes, one can tomatoes, one teaspoonful salt, one pinch red pepper, two tablespoons drippings. Boil till potatoes are soft then mash. This with corn bread, is fine.

Windsor overture, which opens the program, to Victor Herbert's "Irish Rhapsody," which closes 'it. there won't be a number that Isn't attractive to persons with no musical education whatever. Program Is Announced The program, as announced Friday by Director .Davis of the People's Music Course, follows: Overture 'Merry Wives of Windsor'

"Irish Rhapsody" ... Victor Herbert Soloist: Emil Heermann, violin. - There is no symphony on this program. The Tschaikowskl suite takes the place of a heavy symphonic work. This was requested of Dr. Kunwald, conductor of the orchestra, at the behest of Miss Laura C. Gaston, head of the Earlham college school of music. The suite No. 3 Is one of the most popular suites ever played by an American orchestra. Dr. Kunwald included in it the Richmond program because he became so impressed with its color and melody when he was rehearsing It for his first pair of concerts in Cincinnati.

Vacant Chair and Flag Tell Story
There is one vacant chair in Piatt's barber shop, on North Ninth street. In this chair, in place of the usual cover and towel, is a service flag of the United States. George Hill, the barber that formerly worked at the chair is now in the United ' States army, and the other barbers in the .hop placed the flag on his chair in recognition of that fact. "And the flag will stay there until George gets back," says Piatt. A flag is also being shown in the Sanitary shop, at Tenth and Main streets, in recognition of the fact that W. L. Jones, former barber in the r hop is now in the army. ;

The "one I love is

color and make them long and thick? UNDECIDED. (1) Since the boys did not have enough respect for you to come to see you sober, why should you wish to-be so careful of their feelings? They are not fit companions for you and the best thing you can do is to refuse to see them hereafter. (2) Yes, you are too young by several years. (3) Do not marry either of them yet. When you are old enough to marry you will realize that you must marry for love. Of course money is convenient, but you cannot find happiness without love. (5) Your eyebrows will be prettier as they are than if you try to change them in any way. Dear Mrs. Thompson: (1) On
