Here Are GOOD RECIPES For Wholesome Dishes

Chocolate Pie One cup sugar, one-half cup butter, two eggs, one eup milk, two cupa flour, two teaspoons of baking powder; bake In separate pie tins. Filling Two squares chocolate, scraped, one cup boiling water, threequarters cup sugar, small piece of butter. Let come to a boil, then add one tablespoon of conrstarch, mixed with a little water, stir until it thickens. Frosting One square ' chocolate, scraped into two tablespoons of hot water. Add enough confectioner's sugar to make thick. Steamed Apple Pudding Vare six apples, core and cut In lengths; for a batter beat two eggs and a half pint of sugar to a cream and add three heaping teaspoonsful of butter, a scant half-pint of milk, two teaspoonfuls baking powder, In flour, to make batter as stiff as for a cake. Squeeze the juice of a lemon over the apples, butter a mold and put in a layer of hatter, then one of the apples .repeating until mold is filled to witlj in about 2 Inches of the top; cove and steam about three hours; flavor with nutmeg. . Eat with sauce or with cream and sugar.

Stuffed Tomatoes Wash the tomatoes, selecting fine, large, smooth ones for this purpose. Cut slice from the stem end and scoop out inside of tomato. Mix a quarter of an onion with an inch of ham and chop very fine. Put a tablespoonful of butter into saucepan, browning first the onion and then adding the ham. 'Add the inside of the tomatoes and a cup of bread crumbs, that has been wet and squeezed. Mix all together as It fries, and season with salt and pepper when done. Stuff the tomato shell. Sprinkle top with crumbs and a dab of butter and place in oven for twenty minutes or until crumbs are brown.

Fermenting sugar is equivalent to burning it, and there are two results. One is the formation of carbonic acid gas. A great deal of this gas is caught in the dough in the form of large or small bubbles, and some of it escapes into the air. The part that cannot escape causes the dough to rise and makes the bread light. The holes in bread are the little pockets which held the carbonic acid gas. The effect of the bubbles is to lift the body of dough so that the heat can penetrate readily and bake it properly.

Boil half a gallon of fresh milk, add to it a quarter of a pound of butter, pep

per and salt. Mash the tomatoes

through a colander and stir them into boiling milk. Add a teacupful of rolled crackers; serve immediately. If the milk is put into the tomatoes it

will curdle.

Roman Cream.

Six eggs, one quart milk, eight table-

spoonfuls sugar, one-half box gelatine,

one wine glass wine, vanilla to taste, Dissolve the gelatine in the milk, Beat yolks of eggs '. and sugar, thor

oughly and add this to. the' milk, and

put on to boij in double boiler. . As soon as it boils remove from the fire to cool and heat the whites of eggs

and add them to the wine and flavoring, and set on ice in a mold to harden and turn out of the mold to serve.

Green Pea Puree Boil a quart of shelled peas in salted water with a young onion, a few sprigs of parsley and six mint leaves. Rub through a colander and return to the fire, adding half a cupful of good stock salt, ; pepper and a lump of sugar. When, it has. boiled two "minutes stir in a tablespoonful of butter rolled in flour, cook one minute longer and pour upon croutons of fried bread dice in the tureen.

Barley Water. Two ounces of pearl barley, one lemon (finely peeled and the juice). Put the barley to boil in alittie water to extract the color, strain off. Put lemon and' barley with sugar (not much) In a large jug and pour two quarts of boiling water over it Allow it to - get cold. Be careful no pips or white skin go in or it will become bitter.
