Here Are GOOD RECIPES For Wholesome Dishes
Apple Roll.With Sauce Take two cups of flour, one-half s teaspoonful of salt, four level teaspoonfuls baking powder, two tablespeenfuls of butter, two-thirds of a cup of milk, one cup of chopped apple, three teaspoonfuls of sugar, one-half tablespoonful of cinamon. Sift flour, salt and baking powder together and thoroughly mix In butter with tips of ' fingers. Add the milk, stirring it in with a knife. Roll the dough out. a quarter of an inch thick and spread with chopped apple, sugar and cinnamon. Roll like a jelly roll, cut lnthree-quarter-inch slices and place in buttered pan, flat side down. Bake fifteen minutes in a hot oven and serve hot with lemon sauce. The sauce, is , easily made by boiling three-quarters of a cup of sugar and one-half cup of water five minutes, adding to-it two teaspoonfuls of butter and one tea- . spoonful of lemon juice and just a dash of nutmeg. , Rhubarb. Dumpling ' Beef suet, 2 ounces flour 6 ounces; milk, enough to bind; bread crumbs, 2 ounces; sugar, 2 tablespoonfuls; lemon, rind of fjalf; rhubarb, about a quart cut in inch pieces. Sift the flour into the very finly chopped suet and fine bread crumbs. Pour in the milk a very little at a time, mixing with a knife until you ;have a stiff paste. Roll out to about ; half an inch thick. Grease a pudding basin well and cut out a round of the paste, sufficient to make a lid for It. Line It with' the rest of the paste. Then fill half way up with the rhubarb, grate in the half rind of lemon end sprinkle well with the sugar, filling up with rhubarb to the top of the basin. Wet the edge of the paste with water, put on the lid and press round the wet edge. Then cover the top with a well greased paper, tie Into place and tie the whole thing up In a floured cloth; steam for two hours.
To Make Good Coffee Take a tablespoonful of coffee for each cup desired, put in a cheese cloth bag or sack, then pour the boiling water on it, measuring carefully. Do not permit it to boil, just simmer; It must be kept below the boiling point for five minutes. Pack the spout with a clean piece of cheese cloth to keep the steam in; this also keeps in the aroma, which Is wasted by escaping into the air. Carefully follow these directions and you will be delighted with your cup of morning cheer. These three essentials are first and foremost: The perfectly clean pot, a good grade of coffee, using it medium fine, and placing it in the cheese cloth bag; then, last of all, the absolutely fresh boiling water. All this will produce a necttir fit for the gods, a true ambrosia that is within reach of the plainest home. Needless to say 'that cream, good cream, adds the finishing touch to the perfect cup of 'offee.
Fruit and Nut Filling For Cake Cook three cups of sugar and onethird cup of water in smooth saucepans until sirup will spin a thread when dropped from the spoon. Pour gradually while beating constantly on to the whites of three eggs, beaten stiff, and continue the beating until the right consistency to spread; then add one cup chopped raisins, one cup chopped pecan meats and five figs, cut into strips. One-half this quantity is sufficient if used between layers of cake only.

Then add three-quarters of a cup of flour, one cup of sour cream, one teaspoonful of cold water, and two cups of ripe peaches, peeled and sliced thin. Bake and serve with hard sauce.
Stewed Veal Use a brisket or knuckle of veal, cut into pieces of about , an inch square, brown in a tablespoonful of lard, which has been seasoned with pepper and salt Add two small potatoes, peeled and cut into quarters, two onions, two carrots, and when they have been in about ten minutes add two "pints of boiling water and let simmer an hour or more.
Peach Dumplings Sift an even quart of flour twice with one and one-half teaspoonfuls of
baking powder and a half teaspoonful of salt. Chop into this a tablespoonful of . shortening (butter and lard mixed). Mix into a soft dough. Roll the pastry lightly, cut into squares. Take the stones from the nice ripe peaches, which have been pared, fill the cavity with sugar and wrap each
