TEACHES GIRLS
TO SERVE MEALS AT HIGH Miss Parsons Gives Practical Course in Home Making to Add Interest to Domestic Science. Students Study Proper ProDortioning of Diet and Learn to Preserve Fruit by Canning. Troducts of the cooking ' classes of the domestic science section of the high school practically pay the expenses of the food stuffs used in the laboratory, according to Miss Kiturah Parsons, head of the cooking depart- ' ment. All of the canned fruit, vegetables, jellies and preserves made by the high school girls find a ready, market among grocers of the city, and there are manv private customers who pur chase the products of the school kitchen. A record is kept of the expenses end receipts of the laboratory, and In one month last year the sale of fruits and vegetables came within fifteen cents of paying the grocery bill for that month. If the girls desire to purchase their products they may have them at cost. The teachers are glad to have canned fruit and other products taken to the homes, as it gives the pupils an added pride in their work and shows parents the practical side of the course. Makes Work Practical. To make the work as practical as possible is the aim of Miss Parsons, and all first term work is devoted to lundanienta! principles of cookery. First term girls make a study of vegetables, and their proper cooking and serving. Following this they study milk and eggs and their uses.. In the second term the milk and egg study is completed, and attention is given to flour and milk combinations. In the second year the students begin canning fruits and vegetables and the making of jellies and preserves. In this term attention is also paid to the proper balancing and serving of meals. The last term of the course is devoted to a study of dietetics, fancy dishes and invalid cookery. For this work the girls are allowed six tenths of a credit, but it is expected to develop the course so that one credit will be allowed. Two new rooms have been set aside for the use of this department. One will be fitted for a class and study room. Another will be made into a model dining room, and he smaller adjoing room will be used as a model home kitchen. To Serve Meals. In these rooms the girls taking advanced work will be taught the cooking and serving of home meals. Miss Parsons feels that in bringing this home element into the work the pupils will have an added interest in It, and will get more practical value from their studies. The teaching of domestic science is required under Indiana's educationalvocational training law, and in the high school course here girls are required to take either one year of cooking or sewing. PLAN OPEN HOUSE 1W BOYS' QUARTERS
Work In the new boys department at the Y. M. C. A. is complete with the excep"on ol finishing the wood. work. The department will be opened about October 1, according; to plans being made by Secretary Learner. It has not been definitely decided whether to confine this opening to the boys' departmtnt or to have an open-house for the whole building. Should the latter plan be adopted this opening will probably be the first of a series of open house meetings dur ing the winter, including those for. the factory men and their families. Mr. Learner feels that these meetings do much to make the association of more benefit to the conuftunity, and show the value to the people of the city.
