Tho following description of the National Convention by President Harrington will be read with interest by every member of the Post: The national convention of the T. P. A. held in Philadelphia, proved to be one of the most pleasant, if not the most pleasant, gathering of the national organization since its formation. In the Quaker City, known everywhere for Its brotherly love, the delegates and visiting T. P. A.'s were according every courtesy and treated in the most hospitable manner. This spirit of brotherly love permeating throughout the entire convention affected both the business and the pleasures of the visiting T. P. A., causing each one in turn to leave the city tof c Philadelphia with the kindliest me th' ory and pleasant recollections of th convention of 1911. From the first arrival of delegates to tho last departure of the T. P. A., the Philadelphia and Pennsylvania members of the organization did everything in their power to make the visit of every stranger to their gates pleasant and profitable. That they succeed, goes without saying. Never has a gathering so large as the T. P. A. national convention been handled with such precision. Not one littlo thing that might tend to the comfort of the visitors was overlooked. In every particle the conduct of the convention showed wise and careful preparation and skillful execution in every detail. The social side of the convention was elaborate. In the evening of Monday, the first day of the convention, a reception to all visitors was given in the T. P. A. club rooms, the finest T. P. A. club in the United States. These rooms are occupied by the three posts of tho city of Philadelphia, each post using one of three floors, the height of the club room building. This feature of the entertainment was one of the most pleasant of the entire program. On the day following adjournment .f the convention a trip was made to Atlantic City in two special Pennsylvania Railroad trains. Over a thousand people were in the party. The visit to the world-famed resort was a most enjoyable ending to a week's festivities. Lunch was served at the Windsor hotel, the entire delegation being seated at one time. points Buttered Eggs and Tomato. Wash two ounces ot rice thoroughly and cook it until It is quite tender In some nicely flavored white stock which is entirely free from fat. then pass it through a fine wire sieve and reheat it in a saucepan containing an ounce ot warm butter and a saltspoouful of eu.rry powder and two tablespoonfuls of thick stewed tomato; silt it well, add a little salt and black pepper and as soon as it Is hot rout in the betten yolk of an egg. Remove the rice from the store directly the egg Is thoroughly blended with It. Butter some medium sized molds (preferably the low shape), put a nioder ately thick layer of sieved tongue at the top of each, then fill them with the rice, packing It in tightly, and put into a moderate oven for about ten minutes, or rather less if the heat Is fierce. On taking the molds from the oven turn the rice out on to a hot dish and cover the top entirely witt creamy buttered eggs, sprinkle a little finely minced -parsley over the top and serve very bot. Fruit Meringue. Take two pounds of any kind of fruit gooseberries are very goodlump sugar to taste and about half a gill of water to each pound, according to the Juiciness of tbe fruit. Put the water and sugar info a saucepan. Lr them boll for five minutes, then add the fruit and cook rery ' gently till teuder. Bear the whites ol three eggs to a stiff froth and add three tablespoonfuls of sugar. Put tbe fruit into a fireproof dish; spread ' the meringue over it. Bake in a slow oven till the meringue feels crisp and is of a delicate fawn color. Serve rery cold. t Cantaloup Salad. Select four cantaloupes of uniform . size; chill, then cut off a small sectloc t that may serve as a lid. Fill eacfc . cantaloupe with whipped cream which , has been sweetened and mixed wltt . finely chopped ginger and marsbmal-. Iowa. Put the cantaloupe la a freeset . or bucket, pack in equal quantities ol Ice and rock salt and let stand for one hour. Serve upon a platter filled witfc . crushed ice and garnish with uasturtiums and their leaves. Or the cantaloupes could be filled with whipped cream stiffened with lemon or an; ' sweet Jelly. Raspberry and Currant Salad. Halt a pound each ot raspberries, red or white currants and stoned cherries, two bananas, two oranges, half : a can of pears or pineapples. Remove tbe stalks from tbe raspberries. ; currants and cherries. Peel and cut the bananas and oranges into very small pieces, taking out tbe orange PIPS. ' ;" ' : Cut also tbe pears or pineapples into small dice. Put tbe fruit in a salad bowl and poor over some of tbe pineapple or pear Juice. Let It stand In the Icebox for one hour before serving. . ; ' . ' Eggs a la Rum. Eggs a In Russe Is an artistic dish ' and most appetizing. It Is composed ' of whole hard boiled eggs from which the shells are carefully removed, then the eggs laid nixiut a round dish llko a soup plate, thlr surfaces decorated ' with little .piece of truffles, a border of finely minced vegetables flecked with little Dion ml of caviar, and the whole fringed ..wlth white lettuce ; leaves and diamond shaped pieces of Y smoked salmon. The color scheme of . this dish is most novel and attractive. A Delicious Fruit Salad. Six large. -firm apples, one banana, one orange,- a small bunch of white grapes, half a cupful of broken walnut meats, half a cupful of sllcinl candied fruits and one tiiKpmiiifuf of vanilla extract. Chop the ;pie. urango and banana very tin, nd.l the nuts, candied fruit and vnnilia and mix well. Garnish tbe top with the grapes, halved and seeded. If the apples are very sour add a tittle sugar. Serr on small dainty plates. To Fry Muth Quickly. Make the mush in tbe usual way. except that It Is not necessary to cook It so long. Have n tablespoonful each of lard and butter smoking bot in a skillet. Lift tbe bot mush to tbe skillet by spoonfuls and flatten It out. It fries quickly and Is sweeter and crtsper than when allowed to g?t cold and, then fried. It Is delicious when served with fried chicken. Boiled Dressing. For boiled dressing beat np two eggs, add half a pint of vinegar, one teaspooftful of salt, a dash of red pepper, four tablespoon fnts .of sugar and two ounces ot butter. Mix well and cook In a double boiler, stirring constantly until tbe dressing has thickened. Then cool and serve. Tbis dressing may be thinned wltb either cream or olive oil. Cream Salad Dressing. To prepare cream salad dressing rub the yolks of three bard boiled eggs to a smooth paste, gradually add one teaspoonful of salt, one teaspoonfnl of sugar, two tablespoonfuls of vinegar and one teaspoonful of mustard. Whip np one pint of double cream till smooth and stir this a spoonful at a tims into the egg mixture. "Her "Bad Habit. "I don't like that woman.
