Partridges require forty minutes. Serve on toast with currant jelly and with bread sauce, which is made in the following way: One pint of milk, one-half cupful of fine bread crumbs, two tablespoonfuls of chopped onions, one tahlesitoonful of butter, one-half tahlesitoonful of salt, one-half saltspoonful of white pepper, two-thirds of a cupful of coarse bread crumbs and another tabletioonf ul of butter.

Flatten out the breast with a rolling pin; tie wings and legs securely into place and fill loosely with a plaiu bread stuffing. Sew up securely, and if the goose is not fat enough to baste itself lay strips of salt fat pork over the breast and tie in place. Put a little water in the drippiug pan, add a little salt aud pepper aud baste the goose frequently with this. Turn occasionally so as to brown evenly ou all sides until teuder and a nice color. Serve with giblet gravy aud apple sauce. How to Press Chlelien. Draw and singe a chicken. Wipe well with a damp towel, put in a kettle and cover with cold water, place over a moderate tire and simmer gently until the meat falls from the bone.
