New Way of Preserving Eggs.
A St. Loan paper aaya that an establishment is in operation in that city, which is consuming great quantities of eggs, in a new process for their preservation. The eggs are first carefully examined before a bright light to asojrtain their soundness, after wbioh they are placed in a receptiole, where the yolks and whites are separated from the shells, and the former then dried by a patent heat process. When dried they resemble sugar, and this is barreled up and is ready for the market. Eggs thus preserved are said to keep most excellently, and when prepared into omelet for the table, they are equal to fresh eggs. —lndiana Farmer.
