Do not use any vinegar or pepper and salt at starting, or failure may result. Keep adding oil and beating till the mixture gets es thick as batter. Now add some vinegar, about a teaspoonful will suffice, and a liule white pepper and salt Batter some thin slices breed with this sauce and place a very thin, layer of salmon between them, end that, after gently pressing the slices ot breed together, cat the slices into triangular pieces and pilajhem upon a plate, ornamenting the dish with nice bright parsley and placing a few small crayfish, with out-stretched claws, round the base with one on top. It is a pretty, delicious, and inexpensive dish. Good-si*ed prawns may be advantageously substitutue for crayfish. ?
