How to ohtain it in that condition will he 1113- purpose now to Miow. We have seen that it inn ;t he carefully- gathered before it H too ripi, :u it is commonly termed; hut I say hefoie it is ripe, for when it is ripe it is fit to cat, and that should not he the ease with winter apple when thered. Wc have also seen thai heat hasten the ripening process, and that cold retards it. Apples should therefore be kept cool, barely so sw not to freeze. A minimum temperature of thirty-four decrees is probably tibont light, with 113 little fluctuation as possible. I regard it as one of the points very much overlooked in all meetings of this kind. Whether wc regard the rjpening process as u vital or a chemical action, it U ipiito sure that it should go on jjrrduaj md unchecked until all the jrocd qualities are fully developed, and wheu the highest point ot cxcclleiiio is attained, then the fruit nhould be used. It is never so good us when just, fully ripo hut i.s frequently eatable for a long time. Somo arictics become dry and mealy, others tough :md leathery. Others by bein kept vcrj cool, will frequently remain in a very rood cundition for n vcrv long time, or bv the use of r.rtiMci.il means may he kept for an almost indefinite period. I hold that the ripening process once commenced, goes on, no matter how cold, if frost is not present, plowly, perhaps, but unintcn uptedlv. until full tr.aturitv. Hence the importance of a cool cellar, w hic h ; tdiould always le dry and dark. It should he frequently aired, when the outside temperature will allow of it. Some varie ties ate much more sensitive to their treatment than others. The Wmesap, for instance, which Lai a thick skin, may be abused a "great deal iu handling and but indiherentlv cared for in the cellar, ; and yet it will keep pretty well; that is it will ret but little; but, if kept close ftud warm, it is subject to a fuuus that renders it scareelv tolcrable to eat. Hut if it is kept cool und dry, all its best qualities are retained It is also one of the varieties that do best to keep 011 o?n fhi Ives. The Ihdmont, on the other hand, which I regard as one of the lest and most profitable apples, is very impatient of bad treatment. Its skin 13 smooth and thin, and llcsh of a delicate texture. If roughly handled and kept in a warm room it soon decays. If carefully handled and kept in a. cool place, it keeps with very little waste, till April or May.
