The Beautiful Game
The World Cup is taking up a good deal of TV time nowadays, which works out pretty nicely. Basketball and Hockey have finished their championship tournaments and we've got a few weeks until Real Football holds their training camps and life is renewed once more. We could all watch baseball, I'm sure, but there's a reason baseball is called
the National Pastime. If s because during the dog days of summer if s past time for football to start. As a parent and former coach I totally support soccer. I love the fact that kids who play soccer can't hide out in right field and pick daisies. They nave to run and run. Even if they're not especially good at the game it doesn't matter. They run and run and run. If s great exercise. Some call soccer football, which seems silly because you're not allowed to pick up the ball and throw it or catch it, or even just run with it. Be that as it may, there are some who simply call it the Beautiful Game. Why, you may ask, do they call it the Beautiful Game? here are a few reasons. All those floppers and divers are carried off on a stretcher, and halfway through the Last Rites they jump back on their feet and run back into the ballgame. A third reason if s a beautiful game is that at its heart soccer is a game for kids. Specifically the whiny, spoiled brat kind of kids who flops around and screams and cries when he doesn't get his way and doesn't get invited to parties after a while. I know guys in Real Football flop around and whine too, but thaf s usually because their right arm has been snapped in half and is hanging by a thread and the coach is trying to
Fresh Greens Make Delicious Taco Salad
Summer is the best time to make the most of our locally grown fresh produce. Everyone I know has been eating strawberries every way you can think of. Another great food that is ready for us to enjoy a variety of ways is lettuce. In working with the Elkhart County Extension Homemakers for their officer training we decided to have taco salad
for the meal. I really enjoy taco salad and especially at potlucks as you can have it prepared a variety of ways. So as I am working with this great group of volunteers, and hearing the variety of ideas they had for the ingredients we had to work with, the topic of this column was created. Let me just share that there were many ways our taco salad could have been created and we ended with two large bowls and not all the lettuce being used but read the entire column to get the rest of the story. So first, some history. Taco salad is a delicious and thoroughly satisfying meal. This delicious salad originated in the Texas state of America, and is just a combination of the Mexican taco with the American salad. Taco salad is one of the representative dishes of Tex-Mex cuisine which was developed in the 20th century. It is a widespread dish which is served in many parts of the world and is admired for its simplicity and sometimes health benefits. Taco salad is basically a taco without a taco shell. . The Tex-Mex ingredients used in a taj&£salj2i!indudd meatrfflSKc, Chopped Vegetables; beaifiTflfl 1 ffllfcsfcwf® Adding lettuce and tomatoes to the mix m4kes taco salad-e "salad.” The ingredients in a taco salad can vary according to preference. Some people add condiments and seasonings to their taco salads such as guacamole, salsa, garlip and cumin. Although taco salad originally omitted the outer tortilla of a taco, people often serve it in a tortilla bowl. Sometimes, tortilla chips are added to the taco salad or served alongside it. In reviewing information on the internet I found that Sunset Magazine first published a taco salad recipe in May of 1968. The ingredients are what we use today but they didn't stir it all together and that is what many of like about taco salad; all of the flavors are blended together. I also like using a variety of lettuces, like Romaine and Red leaf as there is more nutrition and flavor than when you use iceberg. I really don't see any reason to buy iceberg, the nutrition is like just drinking a glass of water. Yes, we need water, but when we are eating we need to receive nutrients from our food and iceberg has very little. So we were preparing taco salad for 60 ladies and that

People to play it! Have you watched a game. When a player is barely touched they immediately collapse, rolling around in agony, gripping their head or the face even though the place they were bumped might have been their back or their backside. Then they part their fingers and peek to see if they've fooled the referee. The best soccer players can
keep them out of the ballgame. Personally, I'd change the rules so each national soccer team has to have at least two Canadian hockey players. Funny thing, no matter how badly they* re hurt, they jump right back up. Take a good look at their faces. No front teeth. A good hockey player might miss ten minutes of a game while a dentist does emergency surgery without anesthesia in the locker room. If you had a couple of those guys on a soccer team they might just shame the floppers and divers, as well as the referees who fall for such things. None of this has stopped me from watching as much of the World Cup as I can. It's an amazing spectacle, with astounding athleticism, and arresting suspense. I just wish they quit complaining about imaginary fouls and keep on playing. I don't want to seem a great mocker Of futbol - which some folks call soccer, But you whine and you flop, And you fall down, kerplop! Be a sport! Meet an NFL blocker! an old fashioned process and reviewed several recipes from our cookbook collection. We found many recipes and they were all similar. As the ingredients were multiplied I knew from experience that we would have too much salad so I adjusted accordingly. Prior to us gathering to make the salad the lean hamburger was seasoned, browned and cooled. Also a total of six yellow, red, and orange peppers; 10 Roma tomatoes and three sweet onions (we used one) and an entire bunch of celery were chopped. The ladies also had four large heads of Romaine and two red leaf heads to work with. The other ingredients were taco and com chips and Western-style dressing. From my reading I learned that a variety of dressing are used but for many of us it has to be Western-style or it is not taco salad. I also would have added beans but have learned many people don't like beans. They decided that they didn't need all the lettuce and there was one romaine and leaf lettuce left in the refrigerator. They had two bowls,.One vgffi onion and one without. Onetftlriy biggest sfresSft>%llWl 1 am preparing food for a group is that there will not be enough and I commented to one of the ladies as they were serving, "I sure hope we have enough." Long story snort, I rinsed what they thought was extra and worked at tearing it up and as the bowls were served and all the good stuff was in the bottom. We had a need for more lettuce so it was added to bowl and mixed in until all the lettuce was used and the last of the com chips added. In the end we had about four cups left. So the moral of the taco salad is j,ust like a pot of soup: if more guest arrive you just add more broth or water, but in our case, we just added more lettuce. 1 head of romaine or leaf lettuce, torn in small pieces 1 lb. lean hamburger 3 or 4 Roma tomatoes, chopped 1 sniall onion, chopped 2 peppers, color of your choice, chopped 1 can drained beans (black, red, your choice 8-oz. shredded cheese 1 small bag of taco chips/corn chips Small bottle of Western-style dressing Rinse lettuce and tear into small pieces into a large bowl lined with a clean towel. The towel helps absorb extra water from the lettuce. Remove before adding remaining ingredients. Brown hamburger, season, drain and cool. Seasoning the meat with taco seasoning is one option, but to reduce the sodium content, you can season it with chili powder, cumin, garlic powder and minced onion. Chop the tomatoes, onion and peppers. Rinse and drain the beans. Add chopped ingredients and beans to lettuce. Top with seasoned ground beef and shred'ded cheese and refrigerate until ready to serve. Just before serving, crush chips and add to salad. Pour dressing over all and mix to combine. Serve and enjoy!
