Ferguson made the announcement at the Christmas party this month for all of employees and families from the Plymouth plant Ferguson said the quality and work ethic Of the eiiployks at the Plymouth location is prompting him to move the headquarters here. Ferguson, who is originaUy from Plymouth, said, “This is an opportunity to pay forward." Ferguson left Plymouth 38 years ago, but has never forgotten what die community has to offer. Nuts about seasoned nuts recipes
So far this year I have written about many of my favorite, and consequently, your favorite holiday foods, candies, cookies, cheese balls and now seasoned peanuts and nuts. As I began writing on this subject let me say that I have many more holiday favorites, such as eggnog and peppermint ice cream, but this column is about nuts. I am sure many of you have a memory of the bowl of nuts with the metal nut cracker and die picking tools that are used to remove the nutmeats. I am not sure of the history behind this but we always had these when I was growing up and you often see nuts in their shell as a part of holiday fruit and cheese baskets. Now a little about the science of the nufc although die botanical definition is slightly different the word "nut" commonly refers to a seed or fruit with an edible kernel surrounded by a hard or brittle shell. By this definition nuts commonly used in the kitchen include almonds, brazil nuts, cashews, chestnuts, hazelnuts, macadamias,
peanuts, pecans, pine nuts, pistachios, and walnuts. Nuts play a great variety of roles in the kitchen. Nuts add texture to almost every category of dish, from breakfast foods to desserts. At breakfast, nuts appear in dry cereals such as granola. They can be added to breakfast muffins or sprinkled cm top of fruit compote. When we toast or roast nuts, they make a pleasing

During the holiday season and following in the winter months, chestnuts are often braised with chicken, game or pork. Peanuts are the unusual ingredient in chicken and groundnut (peanut) stew (from western Africa). Iranian cooks braise duck in a walnut and pomegranate sauce. Toasting nuts brings out their full flavor and crisps their texture. Nuts used in pastries, cakes, cookies, salads, sautes, and stuffing are almost always improved by a brief toasting in a 325 degree oven. Production in Plymouth began Aug. 5 with only nine employees. By Mid-September the fint unit was loaded and headed for a remote site in North Dakota. The number of employees has now increased to more than 45. Ferguson said here are more than 600 applications for die Plymouth plant, and plans are to increase the workforce to 75 in the near future. "We will be working between Christmas and New Year's when many other plants have to shirt down," he said. "We are grateful for die business." The units feature four separate rooms, complete with kitchens, bathrooms, and sleeping accommodations. The design allows fen' a washer/ dryer area that is shared • by all. Ferguson said he came up with die concept that has proven to be very popular. "It is a blessing," he said, explaining that workers on the gas and oil lines often work for several weeks out in the fields, and usually in areas without hotels nearby.

winter months. Here is a recipe for one of my favorites: Spiced Pecans. Spiced Pecans ' 1 egg white 2 Tbsp. orange juice concentrate 1 pound pecans 1/2 cup sugar 1/4 teaspoon salt 1/2 teaspoon cinnamon Beat eeg white and concentrate until frothy. Stir in pecans to coat. Combine dry seasonings and add to coated pecans. Pour onto a jelly roll pan and . bake at 225 degrees F for one hour, turning every 15 minutes as they're baking. This next recipe for spiced peanuts is wonderful as is, but can be altered to suite your tastes. You can make it spicier by adding crushed red pepper flakes, cayenne pepper or substitute other spices for the ones listed. Be creative and enjoy! Spiced Peanuts 1 large egg white * * 1 Tbsp. water

1 pound raw shelled peanuts 1/2 cup superfine sugar 1 Tbsp. fine salt 2 tsp. ground chili powder 2 tsp. ground cumin 1-1/2 tsp. ground coriander 1 tsp. ground allspice Preheat oven to 300 degrees F. Beat egg white and water in a large bowl until frothy. Add peanuts and toss well to coat. Drain in a colander for 8 minutes. Combine sugar, salt, chili powder, cumin, coriander and allspice in a bowl. Toss peanuts with sugar mixture to coat. Spread peanuts on baking sheet(s) in a single layer. Bake 10 minutes. Shake the baking sheet(s) to stir peanuts and reduce oven temperature to 275 F. Bake 55 minutes longer, shaking baking sheet(s) occasionally. Remove from the oven and shake baking sheet(s) to loosen peanuts, allow to cool 30 minutes. Store in an airtight container or freeze. Yields 3-3 A cups.
