Grain durt can be a mixture of partides of grain, soil plant material fungi, bacteria and other residues. The mixture vanes with the type of grain, growing conditions and how the grain was harvested, stored and processed. Spoiled grain is espedidly contaminated with dust and bacteria. National session brought about roasting chilies
In September I participated in the National Extension Association of Family k Consumer Sciences Annual Session in Albuquerque, New Mexico. At die conference 1 experienced and learned much about die culture of New Mexico; their hospitality and cuisine are first dass. When it comes to food it is all about die pepper/chili and everything they create with diem. So from my food experiences I have developed some new food passions! Prior to and during die Annual Session, Extension Educators in New Mexico were very insistent on saying that New Mexico cooking is unique to New Mexico. There are dime who call it ''Mexico” cooking, but it is not die same as cooking south of the bolder. Most "Mexican' cooking is essentially Native American as adopted by die Spanish. In New Mexico die cooking was originally based on Pueblo Indian dishes and on die foods grown by these people, and not die foods prepared by natives of Mexico.

When we were in New Mexico it was the harvest season for the peppers. Chilies were being dried and roasted everywhere! Prolonged exposure to heavy grain dint can lead to serious respiratory diseases like Toxic Organic Dust Syndrome (TODS or grain fever) or Fanners Lung. Symptoms usually appear four to eight hours after exposure and for boh diseases are similar to flu-like symptoms. Consult your family physician if you develop any type of flu-like symptoms after handling dusty or moldy grain. If you know you are sensitive to
handling hot peppers, use caution to prevent irritation of skin and eyes. Wear gloves and thoroughly wash hands afterwards. There are several ways to roast peppers, over open gas flame or grill fire, broiler, or skillet. The "must" to this technique is turning them often until he pepper is blackened on all sides. Once blackened, place he peppers into a plastic or paper bag, dose it and. set it aside until cooled, usually 15 to 20 minutes. The blackened peel will just slide off he pepper now. Remove the stem, cut he pepper in half and remove he seeds. Lay he halves flat and use he dull side of a small knife to scrape away any black bits of remaining skin and stray seeds. Now you nave roasted peppers with unlimited possibilities. As I mentioned previously, one of my favorite dishes is he Chili Rellenos which I will admit are not he healthiest, but I have been making a baked version and I really like hem better as here is more of he pepper, cheese, salsa flavor.

At a minimum, hat equipment should consist of a dust mask or helmet capable of filtering out dust partides. I am sharing a retipe from a cookbook that we received from New Mexico educators and the Curry County CES New Mexico State University. Enjoy! CHU RHIENOS 1 oz. can whole green duties (or roast your own) 3/4 lb. cheese, cut into 1" x 1/2* x length of duties Salt Flour 4 eggs, separated 1 heaping tsp. flour Oil Drain duties and pat dry. Remove seeds. Place strips of cheese inside duties. Lightly salt chilies and roll in flour. Set aside. Beat egg whites until stiff. Beat egg yolks and add 1 heaping teaspoon flour. Fold egg yolk mixture into egg whites. Heat oil in a large skillet to a deph of 2 inches. Dip each chili in batter to completely coat. Place chilies in hot oil and brown on boh sides. Remove with slotted spoon, drain and serve while hot.
