Planting date chart lakes guesswork out
I spoke to several farmers who are considering a switch to shorter maturity hybrids.' Bob Nielsen, a Purdue Extension Agronomist, had an article on this subject posted on the Purdue Corny News Network wwwagry.purdue.edu/ ext/com. Nielsen's artide included a chart with various planting dates and an assumption of a 50 percent chance of a “normal" frost date for north central Indiana (Oct. 6) and planting dates of May 30 and June 10.
Potato salad a summertime staple
The foods we eat seem to have a lot to do with the weather and season. For the last couple of years our weather has been different! We have had colder than normal temperatures followed by a few days of very hot temperatures, then back to cooler and wet like we normally would have had a few weeks back. Cookouts often start with meat being grilled with lots of side dishes and salads. There are many kinds of salads: bean, potato, fruit, green and others. Interestingly, the word salad comes not from anything to do with green and leafy foods we most often associate with it, but from sal, the Latin word for salt, the first salad dressing. Salt was used as an early preservative to keep herbs and other plants fresh. These salted foods could be considered the original salads.
A trinity of unexpected blessings
As I sat with a friend earlier today, a part of me wept with her. She shared that her youngest would soon be leaving home for college. No longer would she have children under ner roof. I could tell this was disconcerting at best. Just last summer, I was experi- « endng similar feelings. Sonjaiow, . 3fl. spite of my trying to be ready, ‘"'me empty nest happened so quickly. — w. Unkindness actions affect child Dear Editor, This is to the group of people who broke into my husband's car: You should know that my 4-year-old no longer feels safe in his own home for fear that you will come back. How does that make you feel? Weren't you 4 years old once? I'm sorry if your life is that bad that you need to steal from other people. But maybe you should have some compassion and think about how your actions affect others. Dana Pardak Nappanee

If you are planting com now and you want a variety that would mature the week of Oct 6, the approximate "safe" relative maturity of the com would be 109 days. If you wanted to play it safer, and plant a variety expected to mature a week earlier than the expected frost, you might select a 104-day variety. Hopefully this won't happen, but if you are still planting com on June 10, and you want to plant a variety maturing around Ott. 6,
Eventually, all kinds of other ingredients were added to the simple mixture. As you already know a salad can consist of so many different types of ingredients and be served in so many ways that it almost resists definition; except to call it as the dictionary has: a hodgepodge. However, whether cold or hot, appetizer, first course, main course, post-entree refresher, all vegetable, all fruit, with meat, or meatless, most salads share a common characteristic: a sauce or dressing of some sort. After that it is up to personal taste and the creativity of the salad maker. I know from many of you that potato salad is a summertime favorite and you have your own family favorite recipe that you make. With the price of food increasing one of best ways for you to stretch your food dollars is to take whole foods and prepare

Potato salad is best prepared from potatoes cooked in their skins /jackets. While the potatoes are still warm, or still not, you slip the skins off. You want to 1 have your dressing made ahead so you can add it to the warm potatoes so they marinate in the dressing. Much of the potato salad made in the Amish and Mennonite homes is made with potatoes that cooled a bit and were finely cut, or put through a shredder or ricer. When you take the time to

ing hybrids is the difference in grain moisture at harvest. Nielson points out the difference in grain moisture content might not be as great as you think. Typically, a one "day" difference in relative maturity rating equals 05 percentage point difference in grain moisture content at harvest. That means there will only be about 2 points difference between, say, a 106-day hybrid and a 110-day hybrid at harvest. Another question that is sur-
cut the potatoes fine this allows the flavor of the dressing to blend through the potatoes. The variety of potato you use is personal choice. The red potato is more of a waxy potato that holds its shape and doesn't crumble when sliced or diced. I like a good quality medium sized mature Idaho or Russet potato. The potatoes need to be at the best wnen it comes to firmness, with no blemishes, no green skin or sprouting. I have also learned not to use yesterday's cold boiled potatoes; these potatoes will have lost much of their down to earth savor. These potatoes are better for frying or soup. The potato salad I am writing about is the typical American potato salad with mayonnaise / salad dressing, yellow mustard and lots of other great ingredients such as crunchy celery, onions, and sea-

sortings such as horseradish, salt, pepper, garlic, and sugar according to your own personal choices. I know sugar is a must ingredient in many of the redpes in our area and I am amazed at how much sugar there is. Making potato salad a day or two ahead also makes for tastier salad as all the flavors have a chance to blend together. If you don't have a family favorite redpe for potato salad, and you'd like to make your own, try this redpe: 8 medium potatoes, 1 medium onion, 1 cup chopped celery, 1/3 cup sweet pickle relish, and 6 hard cooked eggs. For the dressing combine 1 cup mayonnaise, 1 tablespoon or more prepared mustard, 3/4 cup sugar, 2-1/2 teaspoons of vinegar and additional seasonings to taste. If this is dry add more mayonnaise or vinegar.
