Landscaping project earns Eagle Scout merit
By Merrie Chapman Shawn St. Germain, 19, recently earned his Eagle Scout merit badge from the Boy Scout program. The badge is the highest honor for Scouts who have worked their way from Tender Foot clear through the ranks to become a Life Scout. To earn the Eagle merit badge a Scout must plan out and organize a major project that will help benefit either the community, a church or school. Shawn chose to landscape the area around St. Dominic’s Religious Education Cetfef, Bremen, where he and his family are affiliated. Offers pyramid pointer selection tips for diet
by Mary Ann Lienhart-Cross Extension Educator Elkhart County If you use the food guide pyramid, it will help you go beyond the basic four food groups and practice healthier eating. The most effective way to moderate the amount of fat and added sugars in your diet is to cut down on the “extras.” These are the foods in the sixth food group, such as fats, oils and sweets. Also, choose lower fat and lower sugar foods from the other five food groups. To give you some additional ideas, I will write about each section in the pyramid. Remember to use the fats, oils and sweets sparingly. Go easy on fats and sugars added to foods in cooking or at the table. This means butter, margarine, gravy, salad dressing, sugar and jelly. Choose fewer foods that are higher in sugar, such as candy, sweet dessert and soft drinks. You need three to five servings a day from the vegetable group. Keep these tips in mind. Different types of vegetables provide different nutrients, so you need to eat a variety. Make sure to include dark green leafy vegetables and legumes several times a week. They are especially good sources of vitamins and minerals. Legumes also provide protein, and can be used in place of meat. When preparing or eating food in this group, go easy on the fat you add. Added spreads and toppings, such as butter, mayonnaise, and salad dressing count as fat. Try using the lower calorie versions of salad dressings and similar products. When it comes to the fruit group, you need two to four servings a day. It is important to choose fresh fruits, fruit juices, and frozen, canned or dried fruit. Go easy on fruits canned or frozen in heavy syrups and sweetened fruit juices. Eat whole fruits often, as they are higher in fiber than fruit juices. It is better to eat whole fruits more often than fruit juices, as the fruit is higher in fiber. When it comes to fruit juices, count only 100% fruit juice as fruit. Punches and most fruit “drinks” contain only a little juice and lots of added
physical labor. Shawn’s planning had been so thorough that the project only took two weeks to complete. He began by scoring off the area he was working with, and covering the soil with a weed-guard tarp. Next Shawn and his parents, Daniel and Harriet, cut holes where the various shrubberies would be planted. In all, the Scout estimates that he and his fellow workers planted 33 brushes. He and his father traveled from nursery to nursery personally selecting each shrub. His treasure hunt led to a large variety of greenery, including a Mugho Pine, Purple Plum and Burning Bush —in the under $25 cost category. Shawn’s selections

Choose mostly foods made with little fat or sugar, like bread, English muffins, rice and pasta. Go easy on the fat and sugar you add, such as spreads, seasonings, or toppings. When preparing pasta, stuffing, and sauce from packaged mixes, use only half the butter or margarine suggested. If milk or cream is called for, use lowfat milk. The next two groups suggest that you have 2-3 servings a day. These groups are the milk, yogurt, and cheese group, and the meat, poultry, fish, dry beans, eggs and nut group. The American Intercultural Student Exchange, a non-profit educational foundation, is seeking local host families for high school foreign exchange students for the 1998090 school year. AISE’s students come from over 40 countries, world wide, and the program is expanding operations all the time. Every year, AISE places thousands of exchange students with loving host families throughout the United States. AISE exchange students live with American families and attend local high schools during their 10month cultural exchange experiences. American host families provide these young ambassadors with a place to sleep, meals, and a family atmosphere in which to live. Students are eager to learn about the U.S. government, history, customs and language, while at the same time leaving a lasting impression of their cultures in the minds and hearts of their American host families and peers. also reached the other end of the scale with choices such as the Royal Star Magnolia, S6O. In all he planted 16 different kinds of bushes including two rose bushes. Next the Scout and his workers filled in the area around the shrubs with white stone, and added two strategically placed stone benches. The Eagle Scout also arranged for Mullett Signs to create a lifesize stone statue of St. Isidore, the Patron Saint of Farmers, for whom the education center i£ dedicated. The finished project was a beautifully landscaped area between the building and new sidewalk area—a true work of art to be admired. To pay for the cost of it all Shawn had to visit the Bremen Kiwanis and Knights of Columbus to raise financial support for the project. Each of the service clubs donated approximately S3OO to add to the SI,OOO budget the church had arranged. While the landscaping project is perhaps the most in depth project Shawn has participated in and completed, it is only the grand finale to 10 years of service in the Boy Scout program. During his tenure as an advancing Scout, Shawn has participated in the Adopt-A-Road project and Tootsie Roll fundraising drives hosted annually by the scouts. He has also worked hard to complete the project requirements at each level and taken pleasure in the summer camps, Klondike Derbies and many other events and ceremonies. The highlight of his Boy Scouting experience has been two trips to Philmont, New Mexico, where a very generous millionaire donated 137,000 acres to the Boy Scouts of America. Troops from all over the United States meet there every three years for a variety of activities including hiking up the mountainsidei In addition, to his own experiences Shawn has also called on the expertise of his father. Daniel St. Germain is Assistant Scout Master and committee chairman of the local Boy Scout Troop. Scout Master is Will Wilson. St. Germain's entire family is

When it comes to various foods in this group, remember one and one-half to two ounces of cheese and eight ounces of yogurt count as a serving from this group, because they supply the same amount of calcium as one cup of milk. The last group is the protein group. Choose lean meat, poultry, fish, dry beans and peas often. These are the choices lowest in fat. In all food preparation, and especially the meat group, prepare meat in low fat ways. Trim away all the fat you can see. Remove the , skin from poultry. Broil, roast or boil these foods instead of frying them. Remember that nuts and seeds are high in fat, so eat them in moderation.
