Preparing garden fare in microwave
by Mary Ann Lienhart-Cross Extension Educator Elkhart County There is just nothing like fresh vegetables from your garden, or one of the local vegetable markets. For many gardeners, the vegetable season is well on its way. The zucchini are so plentiful that you are already giving them away. If you want to have a crop all summer, try to keep picking the zucchini when they are small. When they grow to monster size, it is hard on the plant. The zucchini is a natural for the Happy Birthday September 8 Tamera Davis Wendy Walters Elizabeth Ziliak Robert Compton Sandra Haines Brenda Egolf Randy Hoover Dustin Geyer Michelle Newcomer 9 Steve Walters Robert Parcel 1 Anna Adams • Sandra Huber Sandy Speicher Paul Alderman Paula Apple 10 Dr. Walter Anglemeyer Kelly George Donna George Pamela Hollar Oscar Rumfelt Jett Rowland Kelly Gessinger Denise Welty Joseph Hochstetler Jerry Hahn Stan Beehler Carl Thomas Robert Lloyd Aaron German 11 Debby Egging Mary Helen Frederick Mark George Carlyle Lehman Jackie Hedges Jerel Book Andrea Hahn 12 Mabel George Mary Young Gilbert Miller Gilbert Miller, Jr. Dan Roberts Peg Masterson Rachel Stull Virginia Nieman 13 Terry Newcomer Richard Laugh man Glenn McMurray 14 Tom Martz. microwave, since it is high in water and cooks quickly. Make sure to pick them when they are small, young and tender. They are great just lightly steamed, and then sprinkled with herbs, cheese-or try your own combination. Another locally-grown vegetable that is in plentiful supply is broccoli. Broccoli is a member of the cabbage family. It is milder in flavor than its relative, the cauliflower. Broccoli stalks have a tough skin which takes longer to tenderize than the buds. Peeling the stalks on broccoli that has gotten tough not only shortens cooking lime, it makes broccoli more delicate in flavor. Nutritionally-speaking, one cup cut into one-half inch pieces is 90% water, contains 45 calories, 5 grams of protein, a trace of fat, no cholesterol, 10 grams of carbohydrates, 205 milligrams of calcium, 86 milograms of phosphorus, 2.1 milligrams of iron, 239 milligrams of potassium, 20 milligrams of sodium, two-540-intemational units of Vitamin A, and small amounts of thiamin, riboflavin, niacin and ascorbic acid. When selecting broccoli, look for firm, green stalks with tightly-closed dark green or purple-green buds. Head size does not afreet quality. Yellow buds or flowers indicate age and toughness. To store, place unwashed broccoli in a plastic bag and store on the refrigerator shelf. The broccoli will be best if used within a day or two. To prepare, trim one-inch from the butt ends of one to one and a half pounds bunch of broccoli. Divide into spears, if desired, and peel skin from two inches of stalks, or to where the broccoli branches. Rinse in cold water. To help remove the insects from the broccoli, add some salt to the water, or a few drops of dishwashing liquid, and let the broccoli soak in the water for a few minutes. The salt or the soap will bring the insects to the top. Then rince a Couple of times in cold water. To cook spears, pour one-half cup of water into 10-inch casserole or 8 or 12-inch baking dish. Arrange spears with the tender heads toward center of dish. Cover with glass lid, wax paper or plastic wrap. Microwave at high until stalks can be pierced with a fork, rotating dish after half the cooking time. Cook one to one and one-half pounds for 8-12 minutes, and let stand covered 2-3 minutes. For broccoli pieces, clean as mentioned above. Then cut into oneinch lengths and place in two-quart casserole with one-half cup water and cover. Microwave at high until pieces can be pricked with fork, stirring after half the time. For one to one and one-half pounds, microwave for 8-10 minutes, then let stand.
