Commission secretary
The Elkhart County Convention and Visitors Commission has elected new officers for 1986. The new commission president is Jeff Sanger, manager of the Elkhart Midway Motor Lodge; David Formento, manager of the Elkhart Holiday Inn, vice president; Harold Hoffer, Executive Vice President of the Greater Nappanee Chamber of Commerce, secretary; and Edward Gibler, manager of the Ramada Inn in Elkhart, treasurer. Other board members include John Shoup of Cardinal Buses, Robert Schmanske, marketing manager with the Elkhart Truth. The seven member commission administrates the one percent hotel room tax collected in Elkhart County and uses these funds to promote Elkhart County as a site for conventions and tours, as well as family vacations. The estimated impact of visitor spending in Elkhart County is five million dollars annually, according to Charlene Rule, director of

With a name like “chimichangas”, they have to be good! Chimichangas are meat, flour tortilla-wrapped bundles deep fried until flaky and stuffed with a spicy mixture of refried beans, beef, onion, California ripe olives, chopped tomato and Mexican seasonings. Top then with sour cream, ripe olives and grated cheese. CHIMICHANGAS 1 lb. lean ground beef 1 med. onion, chopped (Vi cup) 1 (B'/< oz.) can refried beans 1 med. tomato, seeded and chopped (1 cup) =p = Vi cup minced parsley 2 T. salsa jalapena lVi t. oregano % t. cumin lVi cups pitted ripe olives, wedged 8 flour tortillas (7-8 inch) Vegetable oil for frying Grated Monterey Jack or Cheddar cheese Shredded lettuce Cherry tomatoes, halved Dairy sour cream Add beef and onion to hot skillet. Saute over high heat for five minutes or until beef is cooked. Remove from heat. Mix in beans, tomato, parsley, salsa, oregano, cumin and half of olives. « Fry each tortilla in oiled skillet until it begins to get crisp. Drain and quickly spoon filling into center.
