This column will try to give you some good things to clip, especially recipes. Have you ever wondered what dishes are the favorite of local pas tors, doctors, the mayor, busiftess men, the editor, etc? Clip-N-File will try to answer that question for you. Asa starter, I have been collect ing recipes for the favorite dishes of the local pastors. Their wives have been very helpful in giving me these recipes. I hope you will clio and file, for later use, the ones that appeal to you. An effort has been made to contact all the pastor’s wives who have Nappanee telephones. If you’ve been missed, feel free to mail me your recipe. In later columns other favorite dish recipes from local persons or former local residents will be used. Send your husband’s, or family’s favorie dish recipe and I’ll try to use them whenever they are not too similar to the ones used, or on hand. Send to Mrs. Don Geyer, 606 E. John St., Nappanee, Ind. This is a favorite of Walter Burcham, pastor of the Mt. Tabor Church of God. Chicken Tetrazzini 3 c. cooked, diced chicken Vz lb. macaroni, cookad tender in salt water 2 c. grated cheese 1 can mushroom soup mixed with 1 c. milk Bread crumbs and butter Grease large size baking dish (9x13) with butter or use large casserole. Place in alternate layers macaroni, chicken pieces of butter, if desired, and grated cheese. Repeat layers. Pour mushroom soup mixture over top. Add bread crumbs and dot with butter. Bake in 350 degree oven 30 to 40 minutes. Serves 6. From Mrs. Walter Burcham Mrs. Burcham suggests freezing leftover vegetables and meat drippings to be used later in making soup. She also cooks celery, that you can’t use at the present time, to be used later in dressings etc. ☆ ☆ ☆ A favorite of Don Ruhl, pastor ot the EUB Church. Boston Brown Bread 1 c. .chopped dates 2 c. boiling water 2 t. soda 2 t. buffer 2 c. sugar 2 eggs 4 c. flour 1 t. salt 2 t. vanilla 1 c. chopped nuts Mix together chopped dates, wa ter and soda set aside to cool. Cream butter and sugar. Add eggs Add date mixture —then remaining ingredients. Grease 5 No. 2 cans and fill half full. Bake 1 hour in 350 degree oven. Remove from cans to cool. Keep in refrigerator wrapped in wax paper. May be served as a bread with butter or as a dessert with whipped cream or other toppings. Mix ingredients. Divide in half and put in two cake pans or one large 9x13 baking pan. The batter will be heavy. Sprinkle 2 t. sugar on top. Bake in 350 degree oven for about 20 minutes or untH lightly browned. Individual pans may be used is desired. Serve with strawberries and ice cream while still warm. Fresh or frozen strawberries may he used. Spiced Tea V 4 lb. Lipten Orange Pekoe Black Tea 2 t. ground cloves V 2 orange peel, grated Vz lemon peel, grated Put all ingredients in a large can. Shake up and let set for about a week before using. 1 t. of this mixture will make about 3 cups of tea. Make tea in the usual way. Banana Pie Supreme 6 t. cake flour Vs c. sugar Vi t. salt 1 3 / c. milk 2 egg yolks, slightly beaten 114 t. vanilla 1 baked pie shell 3 bananas V 2 c. cream, whipped Mix flour, sugar and salt in top oi a double boiler. Add milk and cook over hot water, stirring constantly till mixture thickens. Cook 15 minutes longer, stirring occasionally. Pour small amount oi hot mixture over egg yolks. Beat well. Return to double boiler and cook 2 minutes longer, stirring constant' ly. Remove from fire. Cool. Add vanilla. Chill., Fold in whipped cream. Arrange cream filling and sliced bananas in layers in pie shell. Garnish with whipped cream and bananas. (I especially like the fact that I can cook the custard mixture a day or two ahead of time and refrigerate till time to use. This is one of our “Special Occasion” Desserts.) Recipe Take one large, grassy fiald One-half dozen children. Two or three small dogs A pinch of brook, and some pebbles.. Mix the children and the dogs well together And put them in the field constantly stirring; Pour the brook ovor the pebbles; Sprinkle the field with flowers; Spread over all a deep blue sky And bake in the hot sun. Vicki Berger and Mary Jane Tobias gave the pledges to the 4-H and American Flags. Minutes and roll call were given by Mary Jane Tobias. Sue McKee led the singing. The speaker was Art Strong, who talked about 4 H Awards and Achievements. Margaret Metzler gave the Health and Safety report. Recreation and refreshments were enjoyed by all. Meeting was then adjourned. RESIDENT ASSISTANT Mr. Randall C. Richmond, son of Mr. and Mrs. Robert D. Unger oC 552 West Centennial St., Nappanee, has been appointed Resident Assistant for Blumberg Hall at Indiana State College, Terre Haute. Blum berg Hall is anew 12 story coeducational dormitory which will be ready for the fall term in UW Mr. Richmond is a senior at IJS.C. and is majoring in psychology and the social sciences. He is a member of Alpha Phi Omega National Service Honorary, Pi Lambda Phi Social Fraternity, and the Indiana State College Student Mental Health Association. FAMILY FIVE ior U.S. Senator Vance Hartke and his four sons can field a pretty fair basketball team. The senator’s old-' est son, Jan, IT, is captain of his high school basketball team and Jan’s 10-year-old brother, Waynu, is on the junior varsity. The aeautor’s two youngest sons, Keith, 18, and Paul, 10, both play on their grade school teams.
