Intosh and Red Delicious are also good apples for storing, but they are more difficult to keep than the other varieties. Frank Owen, Univ. of 111. fruit crops specialist, points out that stored apples require a low temperature and high humidity. A 32degree temperature and a humidity ranging from 90 to 95 percent are best. Owen explains that the low temperature slows down ripening and prevents the apple from getting over-ripe. A high humidity keeps it from shriveling. Refrigerators offer the best storage conditions if the humidity can be raised to the desired level. Cool basements are satisfactory. But apples will not keep so long as refrigeratorstored apples. If your basement is not humid enough, you can build a storage rack on the floor. Then run water under the racks. Try to keep the humidity at a constant level. Do not store apples in basements where the temperature will dip below 28 degrees at any time.
